MEDITERRANEAN VEGETABLES IN A CREAMY WHITE WINE SAUCE
This versatile dish is elegant and tastes sophisticated. Of course you can vary the vegetables- this is just what I usually have on hand. I like lots of sauce with this dish, but if you prefer less, you could reduce the white wine and cream slightly. For a vegetarian version, simply use a vegetable stock cube instead of a chicken one.

Tips:
- Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready. This will help you stay organized and prevent any mishaps.
- Choose fresh, seasonal vegetables: The fresher the vegetables, the better they will taste in the dish. If possible, use organic vegetables to avoid any pesticides or herbicides.
- Don't overcrowd the pan: When sautéing the vegetables, make sure you don't overcrowd the pan. This will prevent them from cooking evenly and will make them more likely to steam rather than brown.
- Use a good quality white wine: The white wine you use in the sauce will make a big difference in the flavor of the dish. Choose a dry white wine that you would enjoy drinking on its own.
- Don't boil the sauce: When simmering the sauce, make sure you don't let it boil. Boiling will cause the sauce to lose its flavor and become watery.
- Serve immediately: This dish is best served immediately after it is made. The vegetables will still be crisp and the sauce will be creamy and flavorful.
Conclusion:
This Mediterranean Vegetables in a Creamy White Wine Sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal.
