1 ½ lb white fish fillet such as cod or halibut, ((1 to 1 ½ in thickness))
Kosher salt and ground black pepper
Extra virgin olive oil
Juice of ½ lemon (more for later)
8 ounces cherry tomatoes, (halved)
3 ounces pitted olives, (halved (I used a combination of kalamata olives and green olives) )
3 tablespoons minced red onion
4 to 5 garlic cloves, (minced)
1 tablespoon fresh thyme leaves
2 teaspoons dried oregano

Steps:

  • Heat the oven to 425 degrees F.
  • Pat the fish dry and season with salt and pepper on both sides. Brush a 9 ½ x 13-inch baking dish with a little extra virgin olive oil and put the fish in it. Squeeze ½ lemon juice all over the top of the fish.
  • In a medium mixing bowl, combine the tomatoes, olives, onions, garlic and spices. Add a very small pinch of salt and ground pepper. Add a generous drizzle (about 3 tablespoons extra virgin olive oil) toss to combine.
  • Pour the tomato and olive mixture over the fish.
  • Bake in the heated oven for 15 to 20 minutes (this will depend on the thickness of your fish).
  • Remove from the heat and serve.

1 cup chopped onion
1 teaspoon minced garlic
1 (14 1/2 ounce) can diced tomatoes
1/4 cup white wine
1 teaspoon oregano
1/4 teaspoon salt

1 tablespoon sliced olive
1/2 cup feta cheese

Steps:

  • In a small sauce pan, combine onions, garlic, tomatoes, wine, oregano, salt, and pepper.

1 can water-packed quartered artichoke hearts
80 pitted and halved Kalamata olives mL

5 finely grated lemon zest mL

Steps:

  • Preheat oven to 220°C (425°F).
  • Stir together zucchinis, tomatoes, artichoke hearts, olives, and half of oil in a bowl.
  • Spread mixture in a 2-litre glass baking dish measuring 18 x 28 cm (7 x 11 in.). Reserve.
  • In a large bowl, combine remaining oil with lemon zest and juice, salt, and pepper.
  • Add fish and turn to coat well.

4 de-boned white fish filets
( I like to filet the skin off to reduce the fat and fishy flavor.)
1 lg. ripe tomato small diced
1/2 C small diced red onion
3 cloves garlic minced
1/4 C small diced red pepper
1/4 C small diced green pepper
1/4 C small capers
1 C crumbled Feta cheese
1/2 C chopped parsley
Juice of 1 lemon
2 Tbsp Vigin olive oil
1/2 tsp sea salt
1/2tsp black pepper

Steps:

  • Mix all the ingredients together and set aside. De-bone the white fish filets either by v cutting the flesh or by using needle nose pliers. Some fish makets will do this for you, so ask it makes it easier. One sheet of tin foil per filet and spray or grease with olive oil. place filet in the tinfoil and generously spread the mixture over the fish, it's ok if it spills over the sides. Wrap the tin foil and crimp the edges to create a tight seal. Place on a baking sheet. Place in a preheated 375* oven on the top rack and bake for 15 minutes. Remove and let cool for 5 minutes open the tin foil tent plate and enjoy.

1 tablespoon olive oil
1 medium onion, chopped
1/2 sweet red pepper, cored, seeded and chopped
2 garlic cloves, chopped
1 (14 1/2 ounce) can stewed tomatoes
1/2 cup white wine
1 tablespoon capers
12 kalamata olives or 12 black olives, pitted
1 lemon, zest and juice
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
4 fillets, white fish (5-6 oz., tillapia, flounder, catfish)

Steps:

  • Heat oil in a large non-stick skillet over medium-high heat. Add onion, red pepper, and garlic. Cook about 6 minutes, until softened, stirring so garlic does not burn.
  • Stir in tomatos, wine, capers, olives, lemon zest and juice, oregano, salt and pepper.
  • Bring to a boil. Add fish and cook, covered, over medium-low heat for about 8-10 minutes or until fish flakes easily. Gently turn fish halfway through cooking.

2 x 125g sustainable white fish fillets (we used Pollock)
2 lemons, zest and juice 1, the other cut into wedges
1 red chilli, half sliced, half finely chopped
basil, shredded
200g cherry tomatoes
100g couscous
2tbsp balsamic vinegar
½ cucumber, diced
2tbsp pitted black olives, halved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Take one small sheet of foil, about A4 size, and put one fish fillet on top. Season the fish, then drizzle with half of the lemon juice and zest, half the sliced chillies and half of the basil.
  • Halve 4 of the tomatoes and put these around the fish. Place another sheet of foil on top and fold the edges together to seal. Repeat with the other piece of fish and transfer to a baking sheet. Cook for 15-18 mins until the bag has puffed up (or cook on the barbecue).
  • While the fish is cooking pour 100ml of boiling water over the couscous, cover, then leave to swell for 5 mins. Chop the rest of the tomatoes and mix with the couscous, balsamic, cucumber, the remaining basil, lemon juice and zest and olives. Season and serve alongside the fish with the lemon wedges on the side for squeezing over.
