Steps:
- Make dressing by stirring together plain yogurt, a tablespoon of honey and a teaspoon of grated gingerroot.
- Halve melon and scoop out seeds. Slice, peel, and cut into chunks. Mix with grapes.
- Slice mango on each side of the pit. On each half, slash the flesh into a criss-cross pattern down to the skin. Push the skin from underneath to turn the mango halves inside out. Remove the flesh and add to melon mixture.
- Arrange watercress and salad greens on 4 serving plates. Whisk olive oil and vinegar and season to taste with salt and pepper. Drizzle over the watercress and greens.
- Divide the melon mix equally between the 4, then spoon the yogurt dressing on top. If desired, scoop the seed out of the passion fruit and sprinkle over the salad. Serve immediately.

SUMMER MELON SALSA
From Beaver Dam, Wisconsin, Sue Gronholz notes, "I've been experimenting with lots of different fruit salsa recipes, and this one is so good." The refreshing blend of melons is complemented by a slight jalapeno kick. TIP: "We like it with lime-flavored tortilla chips, but it's also delicious over grilled chicken," adds Sue.

Tips:
- Choose ripe fruits: For the best flavor, use ripe mangoes and melons. Unripe fruits will be sour and lack sweetness. Look for fruits that are fragrant and have a slight give when gently pressed.
- Use a variety of melons: Feel free to mix and match different types of melons in your salsa. Some popular options include cantaloupe, honeydew, watermelon, and Persian melon. Each type of melon will add its unique flavor and texture to the salsa.
- Add some heat: If you like spicy salsa, add a jalapeño or serrano pepper to the mix. Be sure to remove the seeds and ribs from the pepper before chopping it, otherwise the salsa will be too hot.
- Fresh herbs: Fresh herbs, such as cilantro and mint, can add a pop of flavor to your melon mango salsa. Chop the herbs finely before adding them to the salsa.
- Chill before serving: For the best flavor, chill the salsa for at least 30 minutes before serving. This will allow the flavors to meld together and develop.
Conclusion:
Melon mango salsa is a refreshing and flavorful salsa that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. Whether you like it sweet, spicy, or somewhere in between, this salsa is sure to please everyone at your next party or potluck.
