1 cup finely chopped cantaloupe
1 cup finely chopped honeydew melon
1 cup finely chopped peeled mango
1/2 cup chopped cucumber

1 green onion, thinly sliced
3 tablespoons lemon juice
1/4 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper

Steps:

  • In a large bowl, combine the first six ingredients. Combine the lemon juice, cinnamon and cayenne. Pour over fruit mixture; toss to coat. Chill until serving. Serve with pita chips.

½ cantaloupe melon, cut into 1/4-inch chunks
2 medium Roma tomatoes, cut into 1/4-inch chunks
½ cucumber, chopped
½ red onion, chopped
½ cup chopped fresh cilantro
1 jalapeno pepper, seeded and minced
1 tablespoon salt
½ tablespoon ground black pepper
1 teaspoon chili powder
½ lime

  • Combine melon, tomatoes, cucumber, and onion in a bowl. Add cilantro, jalapeno, salt, pepper, and chili powder. Squeeze lime juice over mixture and stir well. Refrigerate for a minimum of 1 hour, stirring every 15 minutes if possible.

1/4 cantaloupe
1/4 honeydew melon
1 mango
1/2 red pepper
5 cherry tomatoes (firm)
1/2 red onion
1/2 clove garlic or 1/2 clove garlic salt
1 lime, juice of
cilantro
salt and black pepper
1 dash cayenne pepper
3 -5 slices star fruit, for garnish

Steps:

  • I also like to add a couple of sprinkles of Cumin.
  • It adds a really nice flavour.
  • Honey is also optional, if the lime is really tart, you may want to add a small teaspoon of honey.
  • Cube the melons, mango, and red pepper.
  • Quarter the cherry tomatoes.
  • Slice the red onion into very thin rounds.
  • Combine in a bowl.
  • Sprinkle with 1/2 tsp.
  • garlic salt, or mix in pulversized garlic.
  • Add the lime juice.
  • Chop and add the cilantro leaves.
  • Sprinkle with black pepper, cayenne, salt, and cumin.
  • Mix together.
  • (At this point the smell is heavenly).
  • Garnish with a few thin slices of star fruit.
  • (For me this is purely an aesthetic thing).
  • If it is too sour, add a bit of sugar or honey.

1 cantaloupe
1/2 cup red grapes, halved
1/2 cup green grape, halved
1 large mango
1 bunch watercress or 1 bunch arugula
4 cups salad greens (your choice)
2 tablespoons olive oil
1 tablespoon cider vinegar
1 passion fruit

  • Make dressing by stirring together plain yogurt, a tablespoon of honey and a teaspoon of grated gingerroot.
  • Halve melon and scoop out seeds. Slice, peel, and cut into chunks. Mix with grapes.
  • Slice mango on each side of the pit. On each half, slash the flesh into a criss-cross pattern down to the skin. Push the skin from underneath to turn the mango halves inside out. Remove the flesh and add to melon mixture.
  • Arrange watercress and salad greens on 4 serving plates. Whisk olive oil and vinegar and season to taste with salt and pepper. Drizzle over the watercress and greens.
