1 cup sugar
1/2 ounce ginger, thinly sliced
2 tablespoons Cointreau
1 small honeydew melon, cut in half, seeded
1 small canary melon, cut in half, seeded
1 cantaloupe, peeled, seeded, and cut into 1-inch wedges
Mint sprigs, for garnish
Orange Lace Cookies, for serving

Steps:

  • Fill a large bowl with ice and water; set aside. Place the orange juice, sugar, and ginger in a small saucepan over medium heat; bring to a boil. Let simmer, stirring occasionally, until sugar has dissolved and syrup has thickened, about 15 minutes. Remove from heat; strain syrup into a clean bowl; add the Cointreau; stir to combine. Set bowl in ice bath, or chill in refrigerator, until syrup is cold.

3-1/2-inch-long piece fresh ginger (1 inch wide), peeled and very thinly sliced
8 cups mixed 3/4-inch melon cubes (from 5 to 8 lb. melon)
Leaves from 5 sprigs mint (small leaves left whole; larger leaves sliced into thin strips)

Steps:

  • Combine the sugar with 1/4 cup water in a small saucepan. Bring to a simmer over medium heat, stirring occasionally until the sugar dissolves. Add the ginger and reduce the heat to low. Cook for 7 minutes to let the ginger infuse. Strain through a fine sieve, let cool, and refrigerate until completely chilled.
  • Just before serving, mix the melon cubes in a large serving bowl and pour on just enough of the ginger syrup to lightly coat the melons, about 1/4 cup. Toss with the mint leaves.

1/4 cup packed light-brown sugar
1/4 cup unsalted butter
1 tablespoon Cointreau
1/2 cup plus 2 tablespoons all-purpose flour
1 tablespoon orange zest, finely chopped (about 1 orange)
1/8 teaspoon fine salt

Steps:

  • Preheat oven to 350 degrees. Place a Silpat (a nonstick baking mat), or parchment paper, on a baking sheet; set aside. Combine corn syrup, sugar, butter, and Cointreau in a small saucepan set over low heat; stir until butter melts. Remove from heat. Add flour, orange zest, and salt; stir until combined.
  • Drop heaping teaspoons of batter onto prepared baking sheet, about 2 1/2 inches apart. Place sheet in oven; bake until cookies spread out, bubble, and turn golden brown, about 14 minutes. Remove from oven, and let stand until cookies firm slightly, about 4 minutes. Using a spatula, remove cookies from sheet; place on a wire rack, and let cool until crisp. 1 1/2 very ripe melons, either orange-fleshed or green, about 5 pounds, halved, seeds discarded
2 teaspoons finely chopped or grated lime zest
1 tablespoon plus 1 teaspoon freshly squeezed lime juice
Pinch of salt
1/2 cup buttermilk
1 to 2 teaspoons ginger juice (see note), to taste
1 tablespoon agave syrup (optional)
Chopped fresh mint (about 1 tablespoon)
