CHOCOLATE MINT BROWNIE COOKIES
I LOVE these minty cookies! They are soooo good, are deliciously moist and melt in your mouth. The recipe is originally from Toll House's "Best Loved Cookies" recipe book. **NOTE**: It is easy to make regular chocolate chips minty (if you have trouble finding mint-morsels) by placing them in a jar and taping a mint-extract soaked cottonball to the lid. After sealing and waiting a day or two, chips will absorb the scent and taste minty. OR just use chocolate chips and add about 1/4 tsp (or more depeding on how much you like mint!) mint extract to the dough along with the vanilla.

Tips:
- Prep your ingredients: Before you start baking, measure out all your ingredients and line your baking pan with parchment paper. This will help ensure that your brownies turn out perfectly.
- Use high-quality chocolate: The chocolate you use will make a big difference in the flavor of your brownies. Look for a semisweet or bittersweet chocolate with a cocoa content of at least 60%. Avoid using chocolate chips, as they contain stabilizers that can prevent the brownies from setting properly.
- Cream the butter and sugar together until light and fluffy: This step is essential for creating a smooth and even batter. Cream the butter and sugar together on high speed for at least 2 minutes, or until the mixture is pale yellow and fluffy.
- Add the eggs one at a time: Beat each egg into the batter until it is completely incorporated before adding the next one. This will help prevent the batter from curdling.
- Mix in the dry ingredients gradually: Add the flour, baking powder, and salt to the batter in three additions, mixing well after each addition. Be sure not to overmix the batter, as this can make the brownies tough.
- Add the mint extract: Stir in the mint extract until it is evenly distributed throughout the batter. You can adjust the amount of mint extract you use to taste.
- Bake the brownies until a toothpick inserted into the center comes out with just a few moist crumbs attached: This usually takes about 25-30 minutes. Do not overbake the brownies, as this will make them dry and crumbly.
- Let the brownies cool completely before cutting them: This will help prevent them from falling apart. You can also chill the brownies for a few hours or overnight before cutting them, if desired.
Conclusion:
These mint brownies are the perfect treat for any occasion. They are rich, chocolatey, and minty, with a melt-in-your-mouth texture. They are also very easy to make, so you can enjoy them even on a busy weeknight. So next time you are looking for a delicious and satisfying dessert, give these mint brownies a try. You won't be disappointed!
