oil , for brushing
85g self-raising flour
½ tsp baking powder
40g cocoa
40g ground almond
125g butter softened
100g golden caster sugar
2 eggs
6 Lindt milk chocolate balls

Steps:

  • Ask your grown-up helper to switch the oven on to 180C/160C fan/gas 4. Use a pastry brush to brush the muffin tin or pudding moulds with oil.
  • Sift the flour with the baking powder and cocoa into a bowl, then stir in the ground almonds.
  • Beat the butter with the sugar using a wooden spoon or electric beaters.
  • Add the eggs and flour mix, and beat everything together. Add 1 tbsp water if the mixture is too thick to fall off the spoon.
  • Spoon the mixture into the tins or moulds and level the tops. Push a chocolate into the middle of each one - but don't push it right to the bottom.
  • Ask a grown-up to put the puds in the oven for 20-25 mins. Leave for 10 mins or until cool enough to handle, then carefully turn out onto plates.

  • Put 100g butter and 100g chopped dark chocolate in a heatproof bowl and set over a pan of hot water (or alternatively put in the microwave and melt in 30 second bursts on a low setting) and stir until smooth. Set aside to cool slightly for 15 mins.

Chocolate

Steps:

  • 1. Grease it with baking spread, then cut a small square of baking paper (about the size of the base of the bowl), grease it and place in the base of the basin, pressing it into the corners. 2. Measure all the pudding ingredients into a mixing bowl. Whisk with an electric hand whisk until well blended, light and fluffy. Spoon the mixture into the basin and level the top. 3. Cut a square of foil about 4cm (1½in) bigger than the top rim of the pudding and grease the underside with butter. Make a pleat in the middle of the square. Place it on top of the basin and tightly press around the edges, then tie with string to seal. 4. Put a small plate or a trivet in the base of a deep saucepan. Place the basin on top and pour in enough boiling water to come halfway up the sides and cover with a lid. Bring the water back to the boil, then reduce the heat and simmer very gently for 1½-1¾ hours until firm to touch on top when gently pressed. 5. To make the chocolate sauce, measure the milk and cream into a saucepan. Heat until just boiling, then add the chocolate and vanilla. Remove the pan from the heat and stir until the chocolate has melted. 6. Carefully remove the basin from the pan and take off the foil. To turn out, loosen around the edges with a knife, then turn upside down on to a plate and remove the bowl. Remove the paper on top. Pour some warm sauce over the pudding and cut into wedges. Serve the remaining sauce in a jug.

Tips:

  • Use a double boiler or heatproof bowl set over a saucepan of simmering water. This method ensures that the chocolate melts gently and evenly, preventing it from burning or seizing.
  • Stir the chocolate constantly. This helps to distribute the heat evenly and prevents the chocolate from sticking to the pan.
  • Add a little bit of butter or cream to the chocolate. This will help to make the chocolate smooth and shiny.
  • If you are using a microwave to melt the chocolate, do it in short bursts, stirring in between. This will prevent the chocolate from overheating and burning.
  • Once the chocolate is melted, remove it from the heat and let it cool slightly before using it. This will help to prevent the chocolate from curdling when it is added to other ingredients.

Conclusion:

Melting chocolate is a simple process that can be done in a variety of ways. By following these tips, you can ensure that your chocolate melts smoothly and evenly, without burning or seizing. With a little practice, you will be able to melt chocolate like a pro!
