1 pound ground pork
1 large onion, thinly sliced
1 cup mashed potatoes
2 teaspoons ground allspice
1 teaspoon salt

Pastry for double-crust pie (9 inches)
1 large egg, beaten, optional

  • In a Dutch oven, cook the beef, pork and onion over medium heat until meat is no longer pink; drain. , In a small bowl, combine potatoes and seasonings. 4-1/2 cups all-purpose flour, divided
1/2 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
3/4 cup 2% milk
1/2 cup water
1/2 cup shortening
2 large eggs
FILLING:
1 pound lean ground beef (90% lean)
2 small onions, chopped
4 cups chopped cabbage
1 teaspoon salt
1/2 teaspoon pepper

  • Place 1-3/4 cups flour and the sugar, yeast and salt in a large bowl. Heat the milk, water and shortening to 120°-130°. Pour over flour mixture; add the eggs. Beat with an electric mixer on low until blended. Beat an additional 3 minutes on high. My grandmother makes this every year as a Thanksgiving stuffing, while the meat pie version is rarer. Both dishes are out of this world--two of my favorite things to have! I've always wanted to make this and actually watched her make it once, but I couldn't remember the recipe. Then, one day, when I was flipping through New McCall's Cookbook (an excellent volume), I saw her recipe stuck in one of the pages. Enjoy!!

2 lbs ground beef
1 lb ground pork
2 onions, large
4 stalks celery
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
1 dash pepper
2 cups breadcrumbs (seasoned or plain)
1/4-1/2 cup hot water
1 double crust pie crust, unbaked (for meat pie)

Steps:

  • Chop onions and celery and saute until soft.
  • Lightly cook pork and drain off grease.
  • Add ground beef to pork and cook 5 minutes.
  • Transfer meat to deep pan, pot, or Dutch oven.
  • Add onions and celery.

5.5 ounces all-purpose flour
1/2 tablespoon salt
4.5 ounces cold water
1 tablespoon vegetable oil
2 pounds ground pork
1 onion, minced
3/4 cup grated potato
Salt
Pepper
Allspice
1 egg
3 tablespoons milk

Steps:

  • Preheat the oven to 400 degrees F.
  • Pie Crust: Mix flour and shortening. Add salt and cold water. Add all the cold water at once and mix delicately. Form a ball and refrigerate for 2 hours.
  • Once dough is chilled, flour your worktop. Divide dough in half. Roll out 2 pie crusts. One should be slightly larger than the other, this will be your bottom crust.
  • Meat Filling: Heat the oil in a large pot. Add the pork and onion and cook over medium-low heat for 45 minutes, stirring often. When pork is cooked remove fat from pan. Add grated potato, salt, pepper, and allspice, to taste. Stir well, and let mixture rest for 20 minutes.
  • Preheat the oven to 400 degrees F. Butter the bottom of 9-inch pie plate. Place the bottom crust in the pie plate and poke several holes in the crust with a fork. Make sure an ample amount of crust spills over the edges of the pie plate. Fill the crust with the meat mixture. Level with a spatula. Wet edges of bottom crust and place top crust over meat mixture. Press top crust onto meat mixture to eliminate any air holes. Beat together the egg and the milk to make an egg wash. Pinch the crust edges together and brush the top crust with the egg wash.
  • Bake for 10 minutes. Reduce heat to 350 degrees F and continue baking for 15 minutes or until crust is golden brown.

1 onion, minced
1 pound zucchini, trimmed and sliced thin
1/2 teaspoon herbes de Provence
Salt and freshly ground black pepper to taste
3/4 pound ground veal
1 large egg, beaten lightly
5 tablespoons minced fresh parsley
2 cloves garlic, finely minced
1 1/2 teaspoons each minced fresh thyme and rosemary leaves, or 1/2 teaspoon each dried mint and rosemary, crumbled
1/2 teaspoon Cevender's Greek seasoning, if available
1/2 cup dried or fresh bread crumbs
1/2 cup freshly grated Parmesan, or to taste

  • Preheat oven to 350 degrees.
  • In a nonstick skillet set over moderately high heat, warm the oil until it is hot, add the onion and cook it, stirring occasionally, for 3 minutes. Add the zucchini, herbes de Provence, salt and pepper and cook, stirring occasionally, for 3 to 5 minutes more, or until lightly golden. Let cool.

  • In a bowl combine the remaining parsley, bread crumbs and the Parmesan and sprinkle the mixture over the top of the pie. Drizzle with a little oil. Bake the pie in the oven for 20 minutes, or until cooked through and golden. Let cool slightly before serving. It can be served warm or at room temperature.
