Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 9

1/2 cup (1 stick) unsalted butter
4 cups fresh blackberries
1 cup sugar, plus more for sprinkling
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of fine sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
Whipped cream, creme fraiche, or ice cream, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large cast-iron skillet or ovenproof baking dish, in the oven, 5 to 7 minutes.
  • Meanwhile, place blackberries in a large bowl. Using a potato masher, mash blackberries to release their juices. If blackberries are tart, sprinkle with sugar.
  • In another large bowl, whisk together flour, baking powder, and salt. Add 1 cup sugar, milk, and vanilla extract; mix until well combined. Remove skillet from oven and add melted butter to flour mixture; stir to combine. Pour mixture into skillet and pour blackberries and their juices into the center.
  • Transfer skillet to oven and bake until top is golden brown and a cake tester inserted into the batter comes out clean, about 1 hour. Serve hot, warm, or at room temperature with whipped cream, creme fraiche, or ice cream.

Tips for Making the Best Blueberry Pie:

  • Use fresh, ripe blueberries. This will ensure the best flavor and texture in your pie.
  • Don't overmix the dough. Overmixing can make the dough tough, so mix it just until it comes together.
  • Chill the dough before baking. This will help the dough to hold its shape and prevent it from shrinking too much in the oven.
  • Use a deep-dish pie plate. This will help to prevent the filling from bubbling over.
  • Bake the pie at a high temperature for the first 15 minutes, then reduce the temperature to finish baking. This will help to create a crispy crust and prevent the filling from overcooking.
  • Let the pie cool completely before slicing and serving. This will help the filling to set and prevent it from running out of the pie.

Conclusion:

Blueberry pie is a classic American dessert that is perfect for any occasion. With its sweet and tart filling and its flaky, buttery crust, it's sure to be a hit with everyone at your table. Follow these tips to make the best blueberry pie possible.
