MEME'S BLACKBERRY COBBLER

This delicious cobbler recipe is courtesy of Virginia Willis and can be found in her cookbook, "Bon Appetit, Y'all."

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 9

1/2 cup (1 stick) unsalted butter
4 cups fresh blackberries
1 cup sugar, plus more for sprinkling
1 cup all-purpose flour
2 teaspoons baking powder
Pinch of fine sea salt
1 cup whole milk
1 teaspoon pure vanilla extract
Whipped cream, creme fraiche, or ice cream, for serving

Steps:

  • Preheat oven to 350 degrees.
  • Melt butter in a large cast-iron skillet or ovenproof baking dish, in the oven, 5 to 7 minutes.
  • Meanwhile, place blackberries in a large bowl. Using a potato masher, mash blackberries to release their juices. If blackberries are tart, sprinkle with sugar.
  • In another large bowl, whisk together flour, baking powder, and salt. Add 1 cup sugar, milk, and vanilla extract; mix until well combined. Remove skillet from oven and add melted butter to flour mixture; stir to combine. Pour mixture into skillet and pour blackberries and their juices into the center.
  • Transfer skillet to oven and bake until top is golden brown and a cake tester inserted into the batter comes out clean, about 1 hour. Serve hot, warm, or at room temperature with whipped cream, creme fraiche, or ice cream.

Tips:

- Use fresh corn kernels for the best flavor. If using frozen corn, thaw it completely before using. - Cook the corn kernels in a small amount of water until they are tender, about 5 minutes. - Add the cream, milk, butter, salt, and pepper to the corn kernels and bring to a simmer. Stir constantly to prevent the mixture from sticking to the bottom of the pan. - Once the mixture has thickened, about 5 minutes, remove it from the heat and serve immediately. - For a richer flavor, use heavy cream instead of milk. - Add a pinch of cayenne pepper for a spicy kick. - Top with crumbled bacon, chopped fresh herbs, or grated cheese for a more flavorful dish. - Serve creamed corn as a side dish with grilled chicken, fish, or pork. It can also be used as a topping for tacos, burritos, or baked potatoes.

Conclusion:

Creamed corn is a delicious and versatile dish that can be enjoyed as a side dish, topping, or main course. With just a few simple ingredients, you can make a creamy, flavorful dish that the whole family will love. So next time you're looking for a quick and easy recipe, give creamed corn a try!
