LAMB MERGUEZ - (NORTH AFRICAN RED SAUSAGE)

Lamb Merguez - (North African Red Sausage) image

This recipe was adapted from one posted on the Food 52 (blog). The secret to this tasty merguez is the harissa used. (Whole foods has one that is recommended for this recipe, but use any you like.) It's typically eaten grilled and/or with couscous. You can make it into patties or stuff it into sausage casings. It's best made a day ahead to allow the flavors to develop.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 14

1 tablespoon coriander seed, dry toasted
1 tablespoon cumin seed, dry toasted
1 tablespoon anise seed, dry toasted (or fennel seed, in a pinch)
1 tablespoon cinnamon, preferably Ceylon
1/2-1 teaspoon cayenne, depending on the heat level of the harissa used in the sausage
2 teaspoons turmeric
1 lb fresh ground lamb shoulder
2 garlic cloves, minced fine
1 teaspoon grated fresh ginger
1 tablespoon mixed spice
2 tablespoons harissa
1 tablespoon tomato paste
1/2 teaspoon salt, to taste
ice water, as needed

Steps:

  • Combine the spice mix ingredients and grind fine using a spice grinder or a mortar and pestle. The extra can be stored in a glass jar.
  • Using a mixer, combine all the sausage ingredients. Add the ice water, a tablespoon at a time until the mixture is well combined. Form a little patty and cook it off, taste and adjust the seasoning as you see fit. Cover and chill overnight (for best flavor), or at least an hour.
  • If making patties, dip your hands in ice water as you form them. This mixture will also make one large stuffed casing coil. Chill the patties or coil again if you are not going to cook right away.
  • Grill for 10-12 minutes, total, turning once.

MERGUEZ (A TUNISIAN SAUSAGE)

Merguez (A Tunisian sausage) image

Provided by Craig Claiborne And Pierre Franey

Categories     dinner, appetizer, main course

Time 30m

Yield About 25 sausages

Number Of Ingredients 8

2 1/2 pounds shoulder of lamb, not too lean
1 teaspoon finely minced garlic
5 tablespoons Harissa (see recipe)
1/2 cup cold water
Salt to taste, if desired
freshly ground pepper to taste
16 feet lamb casings (see note)
2 tablespoons corn, peanut or vegetable oil

Steps:

  • Have the meat ground or outfit a meat grinder with the fine blade. Put the meat through the grinder.
  • Put the meat into a mixing bowl, and add the garlic, harissa, water, salt and pepper. Blend thoroughly.
  • Outfit a sausage machine or a hand grinder with a sausage funnel. Slip the casings onto the funnel. Fill the casings with the ground meat mixture, following the manufacturer's instructions.
  • Twist the casings at five- or six-inch intervals to indicate individual sausages. If the casings are not used, individual ''sausages'' can be made by dividing the meat into about 25 portions and shaping each one into a sausagelike shape.
  • When ready to cook, heat the oil in a skillet and add the sausages. Cook until lightly browned on one side and turn. Continue cooking, turning as necessary, until cooked through and nicely browned, about six minutes or longer.

Tips:

  • Choose high-quality lamb and beef: Opt for fresh, lean cuts of lamb and beef to ensure the best flavor and texture for your merguez sausage.
  • Grind the meat coarsely: Coarsely grinding the meat will give your merguez sausage a more rustic and authentic texture.
  • Season liberally: Merguez sausage is known for its bold and flavorful spices. Don't be afraid to be generous with your measurements when adding cumin, coriander, paprika, and cayenne pepper.
  • Use fresh herbs: Fresh herbs like parsley, cilantro, and mint can add a burst of brightness and flavor to your merguez sausage.
  • Don't overmix the sausage: Overmixing the sausage can make it tough and dense. Mix just until the ingredients are evenly combined.
  • Chill the sausage before cooking: Chilling the sausage before cooking will help it hold its shape and prevent it from crumbling.
  • Cook the sausage over medium heat: Cooking the sausage over medium heat will allow it to cook evenly without burning.
  • Serve with your favorite sides: Merguez sausage can be served with a variety of sides, such as couscous, rice, or roasted vegetables.

Conclusion:

Merguez sausage is a delicious and versatile sausage that can be enjoyed in many different ways. It is a popular ingredient in North African and Middle Eastern cuisine, but it can also be used in a variety of other dishes.
