Yield 12

Number Of Ingredients 31

1 ½ cups all-purpose flour
½ cup packed brown sugar
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon ground allspice
½ cup chilled butter, cut into pieces
2 tablespoons cold water
1 tablespoon unsulfured molasses
1 ½ cups pumpkin puree
¾ cup packed dark brown sugar
1 ¼ teaspoons ground cinnamon
1 teaspoon cornstarch
¾ teaspoon ground ginger
½ teaspoon kosher salt
½ teaspoon ground nutmeg
⅛ teaspoon ground allspice
⅛ teaspoon ground cloves
1 cup heavy cream
3 large eggs, lightly beaten
⅔ cup pure maple syrup
½ teaspoon vanilla extract
1 ½ cups firmly packed brown sugar
½ cup all-purpose flour
3 tablespoons butter
½ teaspoon ground cinnamon
½ cup chopped walnuts
½ cup pure maple syrup
2 extra-large egg whites
1 tablespoon white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Sift flour, brown sugar, ginger, cinnamon, baking powder, salt, and allspice together in a large bowl. Cut in butter using your fingers, a pastry cutter, or a food processor until the crumbs resemble cornmeal. Drizzle water and molasses over crumbs, mixing with fingers, until the crumbs begin to cling together. Gather the dough and knead it into a ball. Press crust evenly into the bottom and up the sides of a pie pan.
  • Bake in the preheated oven until lightly golden, 10 to 15 minutes. Remove crust from oven and reduce oven temperature to 350 degrees F (175 degrees C).
  • Combine pumpkin, dark brown sugar, cinnamon, cornstarch, ginger, salt, nutmeg, allspice, and cloves in a large mixing bowl. Pour in cream, eggs, syrup, and vanilla extract and whisk to combine. Pour maple-pumpkin filling into the baked pie crust.
  • Bake in the lower third of the hot oven until center of the pie is almost set, 50 minutes to 1 hour.
  • Meanwhile, combine brown sugar, flour, butter, and cinnamon in a food processor. Pulse until crumbly. Stir in chopped walnuts by hand. Set walnut crumble aside.
  • Remove pie from the oven and top with walnut crumble. Return pie to the hot oven and continue baking until crisped, about 10 minutes more. Remove pie from oven and turn broiler on.
  • Bring maple syrup to a boil in a small, heavy-bottomed saucepan over medium heat, about 5 minutes. Clip an instant-read thermometer onto the pan and watch for the syrup to reach 225 degrees F (110 degrees C).
  • Place egg whites into the bowl of a stand mixer fitted with the whip attachment. Start whipping at medium-high speed. Slowly sprinkle sugar into the whites and whip until soft peaks form, about 2 minutes.
  • Check the syrup and when the temperature reaches 238 degrees F (114 degrees C), reduce the mixer speed to medium and carefully add the hot maple syrup by pouring it along the side of the bowl. Increase mixer speed to medium-high and continue whipping until meringue is thick and shiny, an additional 3 to 4 minutes.
  • Use a spatula to spread meringue over the entire pie all the way to the crust. Toast meringue under the hot broiler until lightly brown, 1 to 2 minutes.
  • Serve chilled or at room temperature.

LEMON MERINGUE BARS WITH POPPY SEED CRUST

Lemon Meringue Bars With Poppy Seed Crust image

These bars are equal parts puckery lemon curd punctuated with a generous amount of lemon zest, and crisp poppy-seed shortbread - twice baked to avoid a soggy bottom. The bars are finished with a billowy swoop of meringue, made with a bit of cornstarch to help keep it from weeping. Make sure to top the bars with meringue while they are still hot from the oven to help seal the two together.

Time 1h

Yield One 9-inch-by-13-inch pan

Number Of Ingredients 19

2 cups/255 grams all-purpose flour
6 tablespoons/75 grams granulated sugar
2 tablespoons poppy seeds
2 tablespoons cornstarch
1 teaspoon lemon zest
3/4 teaspoon kosher salt
1 cup/227 grams unsalted butter (2 sticks), melted and cooled, plus more for greasing the pan
1 3/4 cups/352 grams granulated sugar
4 teaspoons lemon zest
2 tablespoons all-purpose flour
1/2 teaspoon kosher salt
5 large eggs
4 egg yolks (reserve the whites for the meringue)
1 cup fresh lemon juice from about 6 lemons
4 egg whites
1 teaspoon cornstarch
1/2 cup/101 grams granulated sugar
1 teaspoon vanilla extract
Pinch kosher salt

Steps:

  • To make the crust: Heat oven to 350 degrees. Line the bottom and sides of a 9-inch-by-13-inch baking dish with foil, taking care to cover the corners as well. Lightly butter the foil.
  • Whisk the flour, sugar, poppy seeds, cornstarch, lemon zest and salt together. Add the butter and mix until well combined. Press the dough evenly into the bottom of the prepared pan. Bake until deep golden brown, about 25 minutes.
  • Just before the crust is finished baking, prepare the filling: Combine sugar and lemon zest in a large bowl. Rub zest into sugar with your fingertips until well combined and fragrant. Add flour and salt. Whisk in eggs and egg yolks, followed by the lemon juice.
  • When the crust is finished baking, turn the oven down to 300 degrees. Pour the filling over the hot crust and return the pan to the oven. Bake until filling is set, but just slightly wiggly in the center, about 23 to 25 more minutes. While the bars are baking, prepare the meringue.
  • In the bowl of a stand mixer fitted with the whisk attachment, combine the egg whites and cornstarch. Whip on medium-high speed until the mixture is foamy. With the mixer running, slowly add the sugar, about 1 tablespoon at a time, and whip until soft peaks form. Add the vanilla and salt and mix briefly to combine.
  • When filling is set, remove pan from the oven and switch the oven to broil. Carefully spoon and spread the meringue over the hot bars, then set it under the broiler until the meringue is deep golden brown, 1 to 3 minutes, depending on the heat of the broiler. Keep a close eye on the meringue during this process. It can go from perfectly golden to scorched in mere moments. Cool completely before slicing and serving.

Using meringue for the crust on this French silk pie really made it special. Adding pecans gives the meringue a nutty flavor and crunch that's fantastic. The pie itself is silky smooth and full of chocolate goodness. I think I'm going to try out the meringue crust on other pies too!

Tips:

  • Egg whites: Make sure the egg whites are at room temperature before you start. This will help them whip up more easily and create a stiffer meringue.
  • Sugar: Use superfine sugar or caster sugar for the best results. Regular granulated sugar can be used, but it will take longer to dissolve and may not give you as smooth of a meringue.
  • Whipping: Whip the egg whites and sugar until they are stiff and glossy. This can take several minutes, so be patient. You should be able to hold the bowl upside down without the meringue sliding out.
  • Baking: Bake the meringue crust in a preheated oven at a low temperature. This will help it to dry out and crisp up without browning.
  • Cooling: Let the meringue crust cool completely before filling it. This will help to prevent the filling from making the crust soggy.

Conclusion:

A meringue crust is a delicious and versatile dessert option. It can be used to make pies, tarts, and other pastries. It is also a great way to add a little sweetness and crunch to your favorite desserts. With a few simple tips, you can easily make a perfect meringue crust that will impress your friends and family.
