1 1/2 tablespoons canola oil
1 onion, diced
3 garlic cloves, sliced
2 -3 jalapeno peppers, seeded and chopped
1 1/2 cups long grain brown rice
2 3/4 cups water
3/4 cup crushed canned tomato
1 teaspoon dried ancho chile powder or 1 teaspoon chili powder
1 1/2 teaspoons fine sea salt

Steps:

  • Preheat oven to 350 degrees. In an ovenproof saucepan or Dutch oven, heat oil on medium-high heat. Add onion, garlic, and jalapeños and cook, stirring, 4 minutes. Add rice and cook, stirring, 1 minute.
  • Add remaining ingredients. Bring to a boil, stir, and cover. Place in oven and bake until rice is tender, about 50 minutes. Fluff with fork before serving.

1 tablespoon butter or 1 tablespoon oil
1 tablespoon lime juice
1/2 cup brown rice
1 teaspoon onion powder
1 (8 ounce) can tomato sauce
1 cup water
2 tablespoons pickled jalapeno peppers, minced
1 teaspoon hot sauce
1 garlic clove, minced
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1/2 bouillon cube

Steps:

  • Heat butter or oil with lime juice in a skillet over medium-high heat.

4 cups cooked brown rice
1 1/4 cups salsa
1 teaspoon ground cumin
15 ounces canned refried beans
10 ounces frozen corn kernels, thawed
4 ounces canned green chili peppers, mild, diced
1 tablespoon chili powder
10 ounces frozen chopped spinach or 10 ounces collard greens, thawed and set to drain in a strainer over a bowl
3/4 cup low-fat shredded cheddar cheese, divided
2 tablespoons cilantro, fresh, chopped (optional, for garnish)

Steps:

  • Preheat oven to 375ºF. Coat a 2-quart rectangular, round or oval baking dish with cooking spray.
  • In a large bowl, combine rice, salsa and cumin. Spoon 2 cups of rice mixture into prepared baking dish and spread out to evenly cover bottom of dish.
  • In another large bowl, combine refried beans, corn, chili peppers and chili power. Using a rubber spatula, scrape bean mixture on top of rice layer and smooth out top.
  • Squeeze out any excess water from spinach or collard greens and then spread on top of bean layer; sprinkle with 6 tablespoons of cheese. Top with remaining rice mixture and smooth out top; sprinkle with remaining cheese.
