MEXICAN CEVICHE

Mexican Ceviche image

This dish is a regular served on the beaches of Mexico. Serve it as a seafood appetizer or as a side salad dish. You can alter it to suit your own taste. Make it as spicy or as mild as you wish. My friends all love it. I often use shrimp & fish or shrimp & scallops - when I do this I do not marinate the shrimp as the shrimp tend to get tough. I steam the shrimp and add them a few hours before serving as I mix all the ingredients together. In Mexico when they make this they often add sea water (not recommened). If you are using frozen fish, choose a firm-fleshed fish and make sure it is fully thawed with as much moisture as possible removed.

Tips:

- **Use fresh seafood:** The fresher the seafood, the better the ceviche will taste. If possible, try to use seafood that was caught the same day. - **Choose the right type of seafood:** Not all seafood is suitable for ceviche. Some good choices include shrimp, fish, scallops, and octopus. - **Cut the seafood into small pieces:** This will help the ceviche to cook evenly. - **Use a good quality citrus juice:** The citrus juice is what gives ceviche its characteristic flavor. Use fresh lime juice or lemon juice, and avoid using bottled or concentrated juices. - **Add some seasonings:** Ceviche can be seasoned with a variety of ingredients, such as cilantro, onion, garlic, chili peppers, and salt. - **Let the ceviche marinate:** The longer the ceviche marinates, the more flavorful it will be. However, do not marinate the ceviche for more than 24 hours, or the seafood will start to cook. - **Serve the ceviche chilled:** Ceviche is best served chilled. You can chill the ceviche in the refrigerator for at least 30 minutes before serving, or you can serve it immediately over ice.

Conclusion:

Ceviche is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be customized to your own taste. With these tips, you can make the perfect ceviche every time.
