Steps:

  • Melt the butter in a 10-inch cast-iron skillet over medium-high heat. Add the poblano, scallions and jalapeno; cook, stirring occasionally, until slightly softened, 1 to 2 minutes. ¼ cup chopped onion
30 (6 inch) corn tortillas, torn into strips
6 eggs, lightly beaten
2 teaspoons salt
1 (7.75 ounce) can Mexican style hot tomato sauce
½ cup water
½ cup shredded Monterey Jack cheese

Steps:

  • In a large, heavy skillet, heat the oil to 350 degrees F (175 degrees C). Carefully stir in the onion and tortilla strips. Fry until tortilla strips are crisp and golden brown. Remove from heat, and drain on paper towels. Drain the skillet, leaving only a thin residue of oil.

1/4 red onion, finely diced
1 clove garlic, minced
2 large ripe tomatoes, cored & diced
1/2 lime, juice of
1/2 teaspoon honey
1 pinch dried chili
1/2 teaspoon coriander, chopped
3 -4 large eggs
1/4 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon white pepper
2 -3 drops hot sauce
1 tablespoon butter
sour cream
tortilla chips
1/4 avocado, peeled & diced
2 tablespoons cheddar cheese, grated
1/2 teaspoon coriander, chopped

Steps:

  • MAKE SALSA: Heat oil in medium size pan; gently saute onions& garlic until softened (about 2 mins).
  • Add tomatoes& saute for another 3 or 4 mins.
  • Add lime juice, honey& chilies and continue to cook for another 4 to 5 minutes.
  • Just before serving, add coriander.

18 corn tortillas or 1 bag salted tortilla chips
1 tablespoon vegetable oil
5 scallions (both white and green parts), chopped, or 1/2 cup chopped onion
4 to 6 serrano or jalapeno chiles, minced
1 large or 2 small tomatoes, coarsely chopped
1 1/4 teaspoons coarse salt
1/4 cup chopped fresh cilantro (optional)
1 dozen large eggs

Steps:

  • If using corn tortillas, toast individually over a gas flame on low or in a pan for about 40 seconds per side. Stack on top of each other and wrap in foil or a clean kitchen towel. This will steam the toasted tortillas for pliability.
