1 cup whole grain sorghum, uncooked
4 cups water
2 cups cooked, shredded chicken
1 tablespoon Mexican seasoning blend
1 avocado, halved and sliced
1 cup pico de gallo
1 cup roasted corn salsa
1 cup black beans
1 Lime wedges
¼ cup Sour cream

Steps:

  • In a small saucepan, boil 4 cups of water and add 1 cup of whole grain sorghum to make 3 cups of cooked sorghum. Cover with a tight-fitting lid, reduce heat to medium and simmer for 45 minutes or until tender. Fluff with a fork.
  • In a large bowl combine chicken and Mexican seasoning. Add in the cooked sorghum, avocado, pico de gallo, corn salsa, and black beans. Season to taste with salt and pepper. Serve with lime wedges and sour cream.

2-1/2 pounds ground beef
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) tomato sauce
1 envelope chili seasoning
1 package (9-1/4 ounces) corn chips
3 cups hot cooked rice
2 large onions, chopped
2 cups shredded Monterey Jack cheese
1 medium head iceberg lettuce, shredded
4 medium tomatoes, chopped
1-1/2 cups chopped ripe olives
Hot pepper sauce, optional

Steps:

  • In a Dutch oven, cook beef over medium heat until it is no longer pink, 5 to 7 minutes; crumbling beef; drain. Add the beans, tomato sauce and chili seasoning; simmer for 30 minutes, stirring occasionally. , On 2 serving platters with sides, layer the corn chips, rice, onions, meat mixture, cheese, lettuce, tomato and olives. Sprinkle with hot sauce if desired.

1 1/2 lbs cod or 1 1/2 lbs tilapia fillets
1 cup salsa
1 cup shredded sharp cheddar cheese or 1 cup colby-monterey jack cheese
1/2 cup coarsely crushed corn chips
avocado, peeled,pitted and sliced,as garnish (optional)
sour cream, as garnish (optional)
green chili, as garnish (optional)
ripe olives, as garnish (optional)

Steps:

  • Lay the fish fillets in a single layer in a greased 8"x12" baking dish.
  • Pour the salsa over the top, and then sprinkle evenly with the shredded cheese.
  • Top everything with the crushed corn chips.
  • Bake, uncovered, at 400°F for 15 minutes, or until fish is opaque and flakes with a fork.
  • Serve with choice of garnish: sliced avocado, green chiles, olives and sour cream.

Make this tasty Mexican rice to serve a crowd. Our recipe is vegan but if everyone you're cooking for eats meat, some chopped bacon in with the onions works well

2 tbsp olive oil
1 onion , finely chopped
2 peppers (choose your favourite colours), finely chopped
4 garlic cloves , very finely chopped or crushed
1 tsp cumin seeds or ½ tsp ground cumin
1 tbsp tomato purée
small pinch of sweet smoked paprika
250g basmati rice
450ml hot vegetable stock (make sure it's vegan-friendly)
finely chopped coriander and sliced spring onions, to serve

Steps:

  • Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.
  • Pour over the stock, then cover and bring to the boil. Stir quickly, then cover again and place on the lowest heat possible. Simmer for 10 mins. Turn off the heat and leave, covered, for a further 10 mins. If serving straightaway, stir through the coriander and spring onions; alternatively, leave the rice to cool, chill, then re-fry before serving and stir the coriander and spring onions through at the end.
