Yield 6-8 serving(s)

Number Of Ingredients 8

2 (15 ounce) cans black beans, rinsed and drained
2 (14 1/2 ounce) cans Mexican-style stewed tomatoes, undrained
1 (15 1/4 ounce) can whole kernel corn, rinsed and drained
1 (14 ounce) cam reduced-sodium chicken broth
2 cups coarsely chopped potatoes (2 medium)
1 cup purchased salsa
1 cup frozen cut green beans
sour cream (optional for garnish)

Steps:

  • Combine all the ingredients except the sour cream in a 3-1/2- or 4-quart slow cooker. Stir everything together.
  • Cover and cook on high-heat setting for 7-9 hours.
  • If desired, top individual servings with sour cream.

Tips:

  • Use a variety of vegetables. This will give your soup a more complex flavor and texture. Some good options include carrots, celery, onions, bell peppers, zucchini, and spinach.
  • Don't be afraid to experiment with different beans and grains. There are many different types of beans and grains that can be used in minestrone, so feel free to mix and match until you find a combination that you like. Some popular options include kidney beans, black beans, chickpeas, lentils, and barley.
  • Add some protein. Meat, poultry, or fish can all be added to minestrone to make it a more hearty and filling meal. Some good options include ground beef, sausage, chicken breast, or salmon.
  • Season your soup well. Salt, pepper, and garlic are all essential seasonings for minestrone. You can also add other herbs and spices to taste, such as basil, oregano, thyme, or rosemary.
  • Let your soup simmer for a while. This will allow the flavors to meld together and develop. The longer you simmer your soup, the better it will taste.

Conclusion:

Minestrone is a delicious and versatile soup that can easily be customized to your liking. It is a great way to use up leftover vegetables and beans, and it is also a healthy and hearty meal. Whether you are a vegetarian or a meat-eater, there is a minestrone recipe out there for you. So next time you are looking for a quick and easy meal, give minestrone a try.
