3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

1 pound bulk pork sausage
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup 2% milk
1/2 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups sliced peeled potatoes
2 cups shredded cheddar cheese
Minced fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

1 pound bulk pork sausage
1 4-ounce can chopped mild green chilies
4 tablespoons chopped fresh cilantro
1/4 teaspoon hot pepper sauce (such as Tabasco)
1 1/2 cups grated cheddar cheese
1 cup grated Monterey Jack cheese
12 6-inch-diameter flour or corn tortillas

Steps:

  • Preheat oven to 350°F. Sauté sausage in heavy large skillet over medium-high heat until brown, breaking up clumps with back of spoon, about 7 minutes. Using slotted spoon, transfer sausage to 8x8x2-inch glass baking dish or other ovenproof pan. Mix chopped green chilies, 3 tablespoons cilantro and hot sauce into sausage. Sprinkle cheddar cheese, Monterey Jack cheese, then remaining 1 tablespoon cilantro over sausage mixture. Bake casserole 10 minutes.
  • Wrap tortillas tightly in foil. Place in oven to heat through alongside sausage casserole. Continue to bake casserole until cheeses bubble and sausage mixture is heated through, about 10 minutes longer.

1 (10 3/4 ounce) can condensed cream of mushroom soup
3/4 cup milk
1/2 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups sliced potatoes
1/2 tablespoon butter
1 1/2 cups cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Spray 1 1/2 quart casserole with nonstick cooking spray, set aside.
  • Cook sausage, stirring to separate, in large skillet over medium heat until no longer pink, drain fat and discard.
