1 (3 pound) boneless pork roast, cut into 1-inch cubes
1 ½ cups water, divided, or more as needed
½ cup white vinegar
2 teaspoons salt
2 tablespoons lard
2 guajillo chile peppers, seeds and membranes removed
1 ancho chile pepper, seeds and membranes removed
⅓ cup coarsely chopped parsley
6 cloves garlic
1 teaspoon dried oregano
½ teaspoon ground cumin

Steps:

  • Place pork, 1/2 cup water, vinegar, and salt in a large saucepan. Simmer, covered, until all the liquid has cooked off and the pork cooks in its own rendered fat, 45 to 50 minutes. Add lard if there is not enough fat, so pork cooks to a golden brown. Set aside.
  • Place the guajillo and ancho chiles in a small saucepan with 1 cup water. Cover and cook over low heat for 10 minutes. Transfer to a blender and add parsley, garlic, oregano, and cumin; puree.
  • Add the pureed mixture to the pork. Bring to a boil, then lower the heat and simmer, covered, until the pork is tender and can easily be cut with a fork, about 1 hour. It may be necessary to add another cup of water to the pan, depending on the tenderness of the meat.
  • Let pork rest for 15 minutes. Shred with 2 forks.

1 white onion, chopped
2 cloves garlic
2 cups orange juice
½ cup lemon juice
¼ cup white vinegar
2 tablespoons salt

5 pounds pork shoulder roast
salt and freshly ground black pepper to taste
1 tablespoon lard
1 red onion, chopped
3 habanero chiles, seeded and sliced
¼ cup lemon juice
¼ cup white vinegar
1 cup lukewarm water
sea salt and ground black pepper to taste

Steps:

  • Combine achiote paste, white onion, garlic, orange juice, lemon juice, 1/4 cup vinegar, 2 tablespoons salt, 1 tablespoon black pepper, and 1 tablespoon Mexican oregano in a blender; blend marinade until smooth.
  • Rub pork with salt and pepper and place in a pressure cooker. Add lard and pour marinade over pork. Add 2 cups water. Close cooker securely and place pressure regulator over vent according to manufacturer's instructions. Heat to High heat until steam escapes in a steady flow and makes a whistling sound, about 5 minutes. Reduce heat to medium-low or low. Cook for 45 minutes from the start of the whistling sound. Let pressure release naturally according to manufacturer's instructions, 5 to 10 minutes. Unlock lid and transfer pork to a large platter.
  • Prepare the habanero sauce while the meat is cooking. Combine red onion and habanero chiles in a gravy boat. Add 1/2 cup lemon juice, 1/4 cup white vinegar, and warm water. Season with salt, pepper, and dried oregano and mix until everything is well combined.
  • Shred meat with 2 forks and return to the pressure cooker with the cooking juices. Bring to a boil over medium-high heat and cook uncovered until cooking juices have reduced, about 30 minutes. Serve with habanero sauce.

1 (4 -5 lb) pork butt (about 4-5 lbs, but up to 10 is fine too)
2 quarts water (enough to cover meat by about 2/3)
2 1/2 tablespoons chicken bouillon powder (Knorr is my favorite)
1 (15 ounce) can diced tomatoes or 3 tablespoons tomato paste
20 whole garlic cloves (or 2 tbl. granulated, but fresh will work better)
4 whole jalapenos, more can be used for a spicier final dish (or 2 small cans diced green chiles, or 1 small can jalepenos-not pickled)
2 teaspoons oregano (dry leaf..never use ground!)

Steps:

  • Combine all ingredients in a stockpot and simmer until fork tender-this can take from 3-4 hours.
  • Can be made in a crock pot also-decrease liquid by about 1/2, bouillon powder by 1/3, and cook on low for 8-10 hours (or until tender as above).
  • When tender, remove from heat and allow meat to cool in the broth until cool enough to handle (this will keep the meat moist).
  • Shred (or "pull") either with forks or by hand.
  • Place in storage container and add some of the broth to moisten; refrigerate until needed.
  • Reheat either in microwave, or in saucepan; use a little of the juice to keep it moist.
  • For the Mexican-flavored pot roast, don't shred-slice fairly thick (about 1/2"), and make a gravy by thickening some of the juice with either cornstarch or roux (sorry, you'll have to thicken by sight; tough to give an exact quantity for that); serve with plain steamed rice/boiled potatoes and a vegetable-broccoli and/or carrots come to mind first. Leftovers make great open-faced hot sandwiches.
  • For soup, take broth and add some onions, carrots, celery, an extra bit of canned diced tomato (you can use almost anything for veggies depending on what you like/have on hand), some of the pork meat and posole (or hominy); simmer until tender and add shredded cabbage; cook another 15 minutes. Serve with hot tortillas and a salad for a complete meal.
  • Can also be made as beef machaca by using bottom (outside) round, chuck, or brisket; replace chicken bouillon powder with beef.

My favorite easy way to cook pork for burritos or taco filling. I prefer using a slow cooker for this so I don't have to watch it. If you do it on the stove top, be careful not to burn it. Simmer slowly, stir frequestly. It will take about 3-4 hours on the stove or 6-8 in the crockpot.

2 tablespoons cooking oil
2 large onions, chopped
4 garlic cloves, minced
1 (16 ounce) can diced tomatoes with juice
3 -6 fresh chili peppers, chopped (havanero or jalapeno depending on the level of heat desired)
3 bay leaves
1 tablespoon ground cumin

1 -2 cup water

Steps:

  • Heat oil in large pan until hot.
  • Add pork, stir until browned.
  • Add onion, garlic and chilies, cook and stir until onions are tender.
  • Add all spices and stir.
  • Add enough water to just cover meat.
  • Put in crock-pot on Hi for 6-8 hours until meat shreds. (You can help it by pulling meat apart with forks or by pressing meat onto side of pan when almost done.).
  • If not using crock-pot, simmer on top of stove on low heat for 3-4 hours until meat shreds, adding more water if needed to prevent sticking.

3 medium or 2 large russet potatoes to equal about a pound, peeled and diced
1 (2 to 3-pound) pork loin
1/2 yellow onion, whole, plus 1 onion, chopped
2 garlic cloves, smashed
2 bay leaves
12 ounces raw chorizo, casing removed and crumbled
1 (28-ounce) can diced tomatoes
2 canned chipotle chiles in adobo, finely chopped (seeded and ribbed for less heat)
2 tablespoons apple cider vinegar
1 teaspoon dried thyme
1/2 teaspoon dried marjoram
Salt
For serving:
16 corn or flour tortillas
Lime wedges
1 avocado, halved, pitted, peeled and sliced
1 cup fresh cilantro leaves

Steps:

  • Place the potatoes in a large pot of cold water. Add the salt, bring to a boil and cook until tender, 20 minutes. Drain the potatoes and set aside. Place the pork in a large pot of cold water. Add the onion half, the garlic, and the bay leaves. Bring to a boil then reduce the heat to low. Simmer gently until the pork is cooked through and is no longer pink in the center, about 45 minutes. Remove the pork from the water and set it aside until it is cool enough to handle (discard the cooking liquid). Using your fingers or 2 forks, shred the meat into small pieces and set aside. In a large skillet over medium-high heat, saute crumbled chorizo until completely cooked through, 8 to 10 minutes, stirring often. Using a slotted spoon, transfer the chorizo to a paper towel lined plate. Add the chopped onions to the chorizo skillet and cook until soft, about 3 to 5 minutes, stirring occasionally. Add the shredded pork, the tomatoes, and the chipotle chiles. Cook until the tomatoes break down and release their juices, about 5 minutes. Return the potatoes and cooked chorizo to the pan. Stir in the vinegar, thyme, marjoram and salt, to taste. Continue to cook over medium heat until some of the liquid has evaporated, about 5 minutes. While the pork cooks, heat a medium skillet over medium-high heat. Add a tortilla and warm for 10 to 15 seconds. Flip the tortilla over and continue to warm until the tortilla is pliable and heated through, another 10 to 20 seconds. Place warm tortillas in a tortilla warmer or on a plate, cover with a kitchen towel, and set aside; repeat with the remaining tortillas (or warm the tortillas in the microwave: stack them on a plate and cover with a damp cloth; microwave for 30 seconds and keep them covered until you're ready to serve).

2 1/2-5 lb pork shoulder blade roast (boston butt cut)
6 clove garlic, cut into slivers
cumin
adobo
garlic powder
3/4 c chicken broth
2-3 chipotle peppers in adobo sauce (to taste)
2 bay leaves

Steps:

  • 1. Season pork with salt and pepper. In a medium sauté pan on medium-high heat, brown pork on all sides for about 10 minutes. Remove from heat and allow to cool.
  • 2. Using a sharp knife, insert blade into pork, cutting small holes and insert garlic slivers. Season pork generously with cumin, adobo and garlic powder all over.
  • 3. Pour chicken broth in the crockpot, add bay leaves and chipotle peppers. Place pork in crock pot and cover. Cook low for 8 hours. After 8 hours, shred pork using two forks and combine well with the juices that accumalated at the bottom. Remove bay leaves and adjust salt and cumin (you will probably need to add more). Let it cook another 15-30 minutes.

  • place the onions in the crock pot. Place the pork on top of the onions. Add the garlic, serrano, mustard, red chili, vinegar, soy and worchestershire. Pour the cola over all and give a stir to combine. Cook on high for 3-4 hours or low for 6-7. Remove the pork chunks with tongs onto a large plate or pan. Shred with 2 forks. Return the pork to the crock and season with salt and pepper to taste. Add more kick if you want. Stir in more chopped fresh serrano or jalepeno, or red chili flakes if you like it spicier. Continue to cook for another hour.
