RICE PUDDING -- MEXICAN STYLE, ARROZ CON LECHE
This arroz con leche recipe comes from a calender cookbook called Mexico, The Beautiful Cookbook. My Mother-in-law was about to throw it out and I found this wonderful rice pudding recipe in it. It is by far the best I have ever tasted. I omit the the lime and orange peel but I am sure it's probably great with it. uuum, uuum good. *I have made no changes to the recipe but want to make a note that many Food.com users state a frustration with the stirring time so feel free to turn the heat up a little but I posted the recipe exactly as it was on the calendar. I apologize to anyone that has been frustrated. The end result is always wonderful though : ) THANKS for all the wonderful reviews, it is very much appreciated. Enjoy!!!

Steps:
- Place the rice in a large saucepan with the water, cinnamon, lime peel and salt.
- Bring to a boil; lower the heat and cook, covered, until most of the water has been absorbed.
- Beat an egg into the milk.
- Stir in the milk, egg mixture and sugar, stirring constantly, over low heat until the mixture thickens.
- Add the raisins and vanilla and cook for 2 minutes.
- Remove from the heat and let cool for 10 to 20 minutes.
- Transfer to a platter or individual bowls and refrigerate.
- Garnish with ground cinnamon if desired.
Tips:
- Use short-grain rice. Short-grain rice, such as Arborio or Valencia, is the best type of rice to use for arroz con leche because it is able to absorb more liquid and become creamy.
- Rinse the rice before cooking. Rinsing the rice removes the starch from the surface of the grains, which helps to prevent the rice from becoming gummy.
- Use a heavy-bottomed pot. A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from sticking to the bottom of the pot.
- Simmer the rice over low heat. Simmering the rice over low heat will help to prevent the rice from becoming overcooked and mushy.
- Stir the rice frequently. Stirring the rice frequently will help to prevent the rice from sticking to the bottom of the pot and will also help to ensure that the rice is cooked evenly.
- Use whole milk for a richer flavor. Whole milk will give arroz con leche a richer and creamier flavor than low-fat or skim milk.
- Add sugar to taste. The amount of sugar you add to arroz con leche is a matter of personal preference. Start with a small amount and add more to taste.
- Use cinnamon and vanilla extract for flavor. Cinnamon and vanilla extract are two classic flavors that pair well with arroz con leche. You can also add other spices, such as nutmeg or ginger, to taste.
- Serve arroz con leche warm or cold. Arroz con leche can be served warm or cold. If you are serving it cold, be sure to chill it for at least 2 hours before serving.
Conclusion:
Arroz con leche is a delicious and easy-to-make dessert that is perfect for any occasion. It is a popular dish in many Latin American countries and is often served at holidays and celebrations. Arroz con leche can be made with a variety of ingredients, so you can easily customize it to your own taste. Whether you like it simple or with lots of toppings, arroz con leche is sure to be a hit with your family and friends.
