11 large eggs
¾ cup milk
2 cups shredded sharp Cheddar cheese

1 Medium Onion (375g)
1 Green Pepper (220g)
10 Tbsp Sour Cream
16 Oz Cream Cheese
4 tsp Taco Seasoning
To Taste Sliced Jalepenos
20 oz Spinach, drained

Steps:

  • Dice the peppers and onions, cook in some oil until translucent
  • (Optional) Chop up some jalapenos and add to the peppers and onions
  • Transfer peppers and onions into a large prep bowl
  • Add the spinach to the pan and cook until thawed (optionally, microwave and drain), try to remove as much moisture as possible from the spinach
  • Move the spinach to the prep bowl
  • Add ground pork to the pan, cook until browned

7 slices white sandwich bread
1 pound bulk breakfast sausage
Softened unsalted butter or nonstick vegetable cooking spray (for pan)
4 scallions, white and pale green and dark green parts separated, thinly sliced

8 ounces cheddar cheese, shredded (about 2 cups)

  • Preheat oven to 425°F. Toast bread on a rimmed baking sheet until dry, 8-10 minutes.

4 tablespoons chopped fresh cilantro

12 6-inch-diameter flour or corn tortillas

Steps:

1 (12 inch) Italian sausage or 1 (12 inch) Farmer's sausage
1 (10 ounce) box frozen chopped spinach
1/4 cup chopped onion
2 teaspoons minced fresh garlic
3 cups spaghetti sauce
6 ounces tomato paste
cayenne
1 cup ricotta cheese
3/4 cup parmesan cheese
2 egg whites, slightly beaten

  • Put the water on to boil for the pasta.
  • Fry the sausage slices over medium heat in a large skillet (you need room for the sauce later).
