6 ears corn on the cob, husked
2 tablespoons Country Crock® Spread
½ teaspoon salt
2 medium fresh jalapeno peppers, seeded and chopped
2 cloves garlic, chopped
1 teaspoon ground cumin
¼ cup mayonnaise
2 tablespoons lime juice
¼ cup chopped cilantro
2 tablespoons grated Cotija cheese

Steps:

1 tablespoon butter
2 tablespoons mayonnaise
¼ cup grated cotija cheese

4 ears fresh corn, shucked, kernels removed (about 3 cups fresh corn kernels)
kosher salt
2 tablespoons mayonnaise
2 ounces Cotija cheese or 2 ounces feta cheese, finely crumbled
1/2 cup finely sliced green onion
1/2 cup fresh cilantro leaves, finely chopped
1 jalapeno pepper, seeded and stemmed, finely chopped
1 -2 medium garlic clove, minced
1 tablespoon fresh lime juice
chili powder or hot chili flakes, to taste
