ZUCCHINI FRITTERS

Zucchini Fritters image

One day I wanted to serve zucchini as a side dish-but I didn't have the time to slice and deep-fry it. So I came up with these fritters instead! They go especially well with barbecued ribs or pork chops and corn on the cob. I'm an avid recipe clipper. I've also assisted at our church's Wednesday night suppers, cooking for as many as 125 people. -Mary Dixson, Catlin, Illinois

Tips:

  • Use a variety of zucchini. Green zucchini is the most common, but you can also use yellow or even pattypan squash. Each type of zucchini has a slightly different flavor and texture, so experiment to find your favorite.
  • Grate the zucchini finely. This will help the fritters to hold together better and prevent them from becoming too mushy.
  • Squeeze the zucchini dry. This will remove excess moisture and help the fritters to crisp up.
  • Use fresh herbs. Fresh herbs will add a lot of flavor to the fritters. If you don't have fresh herbs on hand, you can use dried herbs, but reduce the amount by half.
  • Don't overcrowd the pan. When frying the fritters, don't overcrowd the pan or they will not cook evenly. Cook the fritters in batches if necessary.
  • Serve immediately. Zucchini fritters are best served hot out of the pan. They can be served with a variety of dipping sauces, such as sour cream, guacamole, or salsa.
