- Break the lasagna noodle sheets into roughly 1-inch pieces. Transfer to a medium microwave-safe bowl or large mug and pour in enough hot water to cover the noodles by 1 inch. Microwave for 3 minutes on high power under tender. 2.
- Drain the noodles.
- In a small bowl, stir together the ricotta, spinach, and salt.
- Spoon 1 tablespoon of marinara sauce into the bottom of a large mug. Add a layer of noodles. Spread 1 tablespoon of the ricotta mixture over the noodles in an even layer. Top with 1 tablespoon shredded Italian cheese and then another 1 tablespoon marinara. Repeat with remaining ingredients. For the final layer, top the noodles with 2 tablespoons of marinara and the remaining shredded cheese.

- Mix ricotta, spinach, garlic, salt, red pepper flakes, if using, pepper, 1 1/2 cups mozzarella, and 1/4 cup Parmesan in a large bowl.
- Spread 1/2 cup marinara evenly in bottom of baking dish. Top with 2 lasagna noodles. Coat noodles with 1/2 cup marinara. Top with half of the ricotta mixture and half of the mushrooms. Repeat with 2 noodles, 1/2 cup marinara, and remaining ricotta mixture and mushrooms.

- In the glass container, spread a layer of tomato sauce. Top the tomato sauce with the lasagna noodles.

- Continue with another layer of noodles, ricotta, tomato sauce, then mozzarella. Repeat.

This is another of those recipes my mom got from the 1980's microwave cooking class. You don't pre-cook the noodles for this. This recipe pre-dates turntables. To save wear and tear on your microwave's turn table take the glass turn table plate out, remove the roller ring and then put the plate back in upside down. This recipe requires a microwave safe 9x13 baking dish. I use a Pyrex one.

Steps:
- Brown ground beef in a microwave safe dish (6-7 min on high).
- Add sauce and water to beef and stir.
- Cook 5-6 min on high.
- Put a thin layer of sauce/beef mixture on bottom of a microwave safe 9x13 baking dish.
- Butter dry uncooked noodles with ricotta cheese and place cheese side up on top of sauce.
- Sprinkle mozzarella on top of Ricotta.
- Repeat steps 4-6 using more generous layers of sauce until done.
- Cover with wax paper and place in microwave.
- Cook 10 min on high.
- Rotate dish.
- Cook 10 min on high.
- Sprinkle with Parmesan cheese.
