12 fresh large mushrooms (washed and dried)
3 tablespoons soft breadcrumbs
2 teaspoons finely chopped spring onions
2 tablespoons butter
grated cheese (a farily strong cheese gives a good flavour)

Steps:

  • Melt butter in a bowl (one minute on FULL power).
  • Remove stems from mushrooms and chop the stems finely. Add breadcrumbs to the melted butter and stir. Combine chopped stems and spring onions to this mixture.
  • Place filling into the mushroom caps and top with grated cheese. Please Note: If filling becomes stiff and hard to handle soften in Microwave oven for 30 seconds.
  • Place mushrooms in a circle on a flat serving dish and microwave on HIGH/FULL POWER for 3-4 minutes or until just soft.
  • Serve as a side dish or as an entree.

1 (15-16-ounce) container part-skim ricotta
1 (10-ounce) package frozen chopped spinach, thawed, squeezed in paper towels to remove excess moisture
1 garlic clove, very finely chopped
1 teaspoon kosher salt
1/4 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon freshly ground black pepper
2 1/4 cups grated mozzarella (about 9 ounces), divided
1/2 cup grated Parmesan (about 2 ounces), divided
1 (24-ounce) jar marinara sauce
6 no-boil lasagna noodles
8 ounces crimini mushrooms, trimmed, sliced 1/4-inch thick, divided
1 tablespoon coarsely chopped flat-leaf parsley leaves
Special Equipment
A deep 8x8-inch microwave-proof baking dish

Steps:

  • Mix ricotta, spinach, garlic, salt, red pepper flakes, if using, pepper, 1 1/2 cups mozzarella, and 1/4 cup Parmesan in a large bowl.
  • Spread 1/2 cup marinara evenly in bottom of baking dish. Top with 2 lasagna noodles. Coat noodles with 1/2 cup marinara. Top with half of the ricotta mixture and half of the mushrooms. Repeat with 2 noodles, 1/2 cup marinara, and remaining ricotta mixture and mushrooms.
  • Top with remaining 2 noodles, sauce, and 3/4 cup mozzarella. Sprinkle with 2 Tbsp. Parmesan.
  • Cover dish with parchment, then cover again with an overturned large microwave-safe plate. Microwave on high 15 minutes. Carefully check to see if noodles are tender; if not, re-cover and microwave in 1-minute bursts until tender.
  • Let stand, covered, 10 minutes. Very carefully remove parchment. Sprinkle with parsley and remaining 2 Tbsp. Parmesan and serve.

8 ounces mixed mushrooms (lrg & flat)
2 ounces butter
2 shallots (finely chopped)
6 ounces Stilton cheese (may use the other British variety of Blue)
1 ounce fresh breadcrumb
salt and pepper (to taste)

Steps:

  • Carefully remove the stalks from the mushrooms & chop finely. Wipe the caps w/damp kitchen paper.
  • Place half the butter in a bowl & microwave on HIGH for 1 minute. Then add the mushroom stalks + shallots & cook on HIGH for 2 minutes. Cool for 5 minutes.
  • Crumble in the cheese. Then add breadcrumbs & salt + pepper to taste & mix well. Divide mixture among the mushroom caps.
  • Place the remaining butter in a lrg shallow dish & microwave on HIGH for 1 minute. Place the stuffed mushrooms in the dish, cook for 2 minutes & serve immediately.

EASY CRAB STUFFED MUSHROOMS (MICROWAVE)

I came up with this recipe years ago and it has been a big hit each time I have made them since. One of the great things is you can use this same mixture to make excellent wontons.

1 lb mushroom caps
1 8- oz package cream cheese
1 pkg imitation crabmeat
lemon pepper
real butter

Steps:

  • 1. In a mixing bowl combine softened cream cheese with shredded crab meat. Everyone has their own taste as to how much crab to add. I just make sure there is more cream cheese than crab.
  • 2. Add lemon pepper to taste. In my experience more is better so don't be shy with it. Taste it as you go and remember you can always add more.
  • 3. Stuff each individual mushroom cap and place in a microwave safe glass baking dish making sure the size of the dish will fit in your microwave.
  • 4. Place several pats of butter evenly in the bottom of the baking dish. Depending on the size of the dish as to how many pats of butter. You don't want them swimming in butter but want them moist while cooking and the butter adds flavor. I average about 6 or so.
  • 5. Cover the dish with Saran Wrap and place in the microwave.
  • 6. Cook on high. The time will vary for each microwave. I usually start out with about 4-5 minutes and add minutes as I go if needed. Get a feel for how your microwave cooks them and be sure not to overcook. You don't want the cheese mixture to cook over into the pan.
  • 7. That is all there is to it. Enjoy!!!
  • 8. Note: This mixture is fantastic to use as a wonton filler as well!
  • 9. Note: These are excellent as they are but you can add other ingredients to suit your taste such as crumbled bacon, etc. If you add onion go sparingly so as not to drown out the taste of the crab. Once cooked in the microwave you could add your choice of shredded cheese on top and pop them in the oven on a low broil to melt the cheese.
