MICROWAVE SWEET POTATO BAKE

Microwave Sweet Potato Bake image

This is a dish my mother created. It is so easy, fast and always gets rave reviews from dinner guests! It is my favourite side-dish. It goes really well with fish or any other white meat. I have always made this by eye, so the measurements are a rough estimate. (Preperation time excludes steaming of the sweet potatoes.)

Time 15m

Yield 6-8 serving(s)

Number Of Ingredients 5

4 -5 large sweet potatoes, steamed and peeled
250 g ginger biscuits, crushed (Gingernuts)
12 ounces evaporated milk
2 bananas
1 1/2 cups soft brown sugar

Steps:

  • Thickly slice the sweet potato, and place a layer into a round 9" microwave-safe dish.
  • Slice the bananas and place the banana slices over the gaps left by the potato.
  • Sprinkle the banana and sweet potato with a layer of gingernut crumbs. (Be sure to save some for the other layers.)
  • Sprinkle generously with some of the brown sugar.
  • Continue to build layers, finishing with gingernuts and sugar.
  • Pour enough evaporated milk over the dish to fill all the gaps. Last layer of potato should still be visible above the milk.
  • Place into the microwave and cook on high for 5-7 minutes.
  • Let stand for 2 minutes before serving.
  • VARIATION: Add some mini marshmallows for variation. The dish is sweet enough without them, so reduce sugar if you choose to do so.

Tips:

  • To ensure even cooking, use medium-sized sweet potatoes of similar size.
  • Scrub the sweet potatoes thoroughly to remove any dirt or residue before cooking.
  • Do not wrap the sweet potatoes in plastic wrap; this will result in uneven cooking.
  • Adjust the cooking time depending on the wattage of your microwave. Start with the recommended time and add more if needed.
  • Avoid overcooking the sweet potatoes, as this will make them mushy. A fork should easily pierce through the flesh when they are done.
  • Let the sweet potatoes stand for a few minutes before handling or cutting them. This will help prevent them from breaking apart.
  • Topped butter or spread, cinnamon, or brown sugar are popular toppings for baked sweet potatoes.
  • For a healthier option, top your baked sweet potato with a dollop of Greek yogurt or a sprinkle of quinoa.

Conclusion:

With its quick and convenient cooking method, the microwave presents a fantastic option for preparing tender and delicious baked sweet potatoes. Experiment with various toppings and seasonings to create a dish that suits your taste preferences. Microwave-baked sweet potatoes are not only nutritious and flavorful but also incredibly versatile. Enjoy them as a standalone snack or incorporate them into a variety of dishes, including salads, soups, and stews. So, embrace the ease and convenience of microwaving and elevate your culinary repertoire with this simple yet remarkable cooking technique.
