Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 10

3 lbs lamb or 3 lbs turkey
1 large onion
3/4-1 cup finely chopped fresh parsley
4 garlic cloves
seasoning salt or salt
allspice
black pepper
garlic powder
3 -4 tomatoes (any size)

  • What you can do is start by chopping up your parsley in a food chopper until fine.
  • Do not use dried parsley.
  • Then put the parsley in a large mixing bowl.
  • Then cut onion up into pieces-- doesn't matter how small just so you can fit it into the chopper and combine the garlic and chop away until fine-- not pasty though.
  • Put the onion garlic mixture in the bowl with the parsley and add ground meat and spices.
  • Mix with hands until everything is well blended.
  • Pat the meat mixture down in the bottom of a 9x13 baking pan and broil in oven until top is browned, this will enhance the flavor, then take out of the oven.
  • Peel potatoes.
  • Slice tomatoes and potatoes into quarter of an inch in size and layer-- potatoes first and then tomatoes will be top layer.
  • Sprinkle with a little salt-- and bake in oven about 425°F covered with foil for approximately 45 minutes to and hour-- enjoy.

KOFTA KEBABS

Kofta Kebabs image

These kebabs have 6 different kinds of spices; the first time I smelled them I knew immediately that I had to find the recipe. The most affordable way to purchase the spices is in bulk at either a health food store or an Asian or Middle-Eastern market. They are very good! Serve with yogurt, flat bread, lettuce, tomato and cucumber.

Time 1h20m

Yield 28

Number Of Ingredients 13

4 cloves garlic, minced
1 teaspoon kosher salt
1 pound ground lamb
3 tablespoons grated onion
3 tablespoons chopped fresh parsley
1 tablespoon ground coriander
1 teaspoon ground cumin
½ tablespoon ground cinnamon
½ teaspoon ground allspice
¼ teaspoon cayenne pepper
¼ teaspoon ground ginger
¼ teaspoon ground black pepper
28 bamboo skewers, soaked in water for 30 minutes

Steps:

  • Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board. Mix the garlic into the lamb along with the onion, parsley, coriander, cumin, cinnamon, allspice, cayenne pepper, ginger, and pepper in a mixing bowl until well blended. Form the mixture into 28 balls. Form each ball around the tip of a skewer, flattening into a 2 inch oval; repeat with the remaining skewers. Place the kebabs onto a baking sheet, cover, and refrigerate at least 30 minutes, or up to 12 hours.
  • Preheat an outdoor grill for medium heat, and lightly oil grate.
  • Cook the skewers on the preheated grill, turning occasionally, until the lamb has cooked to your desired degree of doneness, about 6 minutes for medium.

Tips:

  • Choose the right type of meat: Ground lamb or beef are traditional choices for kofta, but you can also use turkey, chicken, or a mixture of meats. If you're using lamb, make sure it's not too fatty.
  • Season the meat well: Kofta is typically seasoned with a combination of spices, such as cumin, coriander, paprika, and cinnamon. You can also add fresh herbs, such as parsley, cilantro, or mint.
  • Use a food processor to grind the meat: This will help to ensure that the kofta is evenly textured.
  • Chill the kofta mixture before cooking: This will help to keep the kofta from falling apart.
  • Cook the kofta over medium heat: This will help to prevent the kofta from burning.
  • Serve the kofta with your favorite sides: Kofta can be served with rice, pita bread, or vegetables.

Conclusion:

Middle Eastern baked kofta is a delicious and versatile dish that can be enjoyed by people of all ages. With its simple ingredients and easy-to-follow instructions, this recipe is a great option for busy weeknights or special occasions.
