MILLIONAIRE'S CAKE
This cake is more of a layered torte, than a frosted cake. It is kept in the refrigerator and is very delicious. I have been making this cake for many years and recently made it for my nephew's 24th birthday. It is his favorite.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan.
- Drain pineapple. Put pineapple in a clean layered cheesecloth and wring out remaining juice. If pineapple is not well drained, it will make the filling runny.
- Mix and bake cake according to package instructions. Pour 1/2 of the batter into the prepared pan. Discard or find another use for the remaining half of the batter.
- Bake at 350 degrees F (175 degrees C) for 20 minutes or until done. Let cake cool in pan on a wire rack.
- Beat softened cream cheese until fluffy. Slowly add milk, combining thoroughly. Add instant pudding and beat until thick. Pudding mixture will thicken when refrigerated. When cake is cool and pudding mixture is thickened you can assemble the cake. Spread pudding mixture on top of the cooled cake. Sprinkle drained pineapple over pudding. Carefully spread thawed frozen whipped topping over all. Sprinkle chopped walnuts over all. Refrigerate. Enjoy!

I've been using this recipe from chef John Dougherty at the Waldorf for 18 years. It's Dh's favorite, especially cold in a sandwich with lots of Dijon mustard. This recipe is easily doubled and can serve 40 at a buffet.

Tips:
- Use high-quality ground beef. The better the beef, the better the meatloaf will be. Look for ground beef that is at least 80% lean.
- Don't overmix the meatloaf. Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
- Use a variety of seasonings. Don't be afraid to experiment with different seasonings to find a combination that you like. Some popular seasonings for meatloaf include garlic powder, onion powder, paprika, thyme, and rosemary.
- Add some moisture to the meatloaf. This will help keep the meatloaf moist and juicy. You can add moisture to the meatloaf by using eggs, milk, or bread crumbs.
- Cook the meatloaf at a low temperature. This will help prevent the meatloaf from becoming dry. Cook the meatloaf at 350 degrees Fahrenheit for about 1 hour or until it reaches an internal temperature of 160 degrees Fahrenheit.
- Let the meatloaf rest before slicing. This will help the meatloaf hold its shape when you slice it.
Conclusion:
Millionaire's meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its simple ingredients and flavorful sauce, this meatloaf is sure to be a hit with your family and friends.
