MINESTRONE SOUP WITH TORTELLINI (PRESSURE COOKER)

Minestrone Soup With Tortellini (Pressure Cooker) image

This recipe was created for the pressure cooker, but I find it just as easy to make on the stove top or slow cooker. From Bob Warden's Slow Food Fast cookbook. The recipe calls for dry tortellini in the pressure cooker, but if using the stovetop, you could use refrigerated pasta.

Time 20m

Yield 6 serving(s)

Number Of Ingredients 13

2 tablespoons olive oil
1 white onion, diced
2 stalks celery, cut into 1/4 inch slices
2 carrots, sliced into 1/4 inch discs
1 tablespoon fresh garlic, minced
8 ounces dry cheese tortellini (found in pasta section of grocery)
4 cups vegetable broth
1 (24 ounce) jar spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes
1 1/2 teaspoons italian seasoning
1 teaspoon sugar
1/4 teaspoon ground black pepper
shredded parmesan cheese, for garnish

Steps:

  • Pressure Cooker: Add oil to the pressure cooker and heat on high or "brown" with the lid off. Saute onions, celery, carrots, and garlic until onions begin to sweat. Add the remaining ingredients and stir. Securely lock on the pressure cooker's lid, set the cooker to high and cook 5 minutes. Perform a "quick release" to release the cooker's pressure. Check pasta for doneness. If too al dente for your likeness continue to boil on high or "brown" with the lid off to your preference. Serve topped with parmesan cheese.
  • Stove top: Saute onion, celery, carrots and garlic in oil until onion is transparent. Add the remaining ingredients and simmer until pasta is cooked to your preference.

HEARTY MINESTRONE SOUP (INSTANT POT®)

Hearty Minestrone Soup (Instant Pot®) image

So I feel like I am using my Instant Pot® at least 4 times a week. I have been having a great time experimenting and am amazed at the way the flavors are locked in and how quickly the meals are finished... not to say the super easy clean up. The main insert can go in the dishwasher and I hand-clean the top with very sudsy water.

Tips:

  • Use a variety of vegetables: This will give your soup a more complex flavor and texture. Some good options include carrots, celery, onions, potatoes, green beans, and tomatoes.
  • Don't be afraid to experiment with different types of beans or lentils: These are a great way to add protein and fiber to your soup. Some good options include kidney beans, black beans, lentils, and split peas.
  • Use a flavorful broth: This will make a big difference in the taste of your soup. You can use chicken broth, vegetable broth, or beef broth. If you're using canned broth, be sure to dilute it with water so that it's not too salty.
  • Add some herbs and spices: This will help to brighten the flavor of your soup. Some good options include garlic, oregano, basil, thyme, and rosemary.
  • Don't overcook the pasta: Pasta will continue to cook in the hot soup even after it's been removed from the heat. So, it's important to cook it for just a few minutes, or until it's al dente.

Conclusion:

Minestrone soup is a delicious and versatile dish that can be made with a variety of ingredients. It's a great way to use up leftover vegetables and meat, and it's also a hearty and filling meal. So next time you're looking for a quick and easy soup recipe, give minestrone a try!
