This is a family favorite. My aunt used to make them every Easter. The recipe comes from an old church cookbook. Whenever I order the meat from the meat market, I order ground ham and pork from a local meat market premixed. I order triple the meat required, packaged into three packages, give one to my mother, use one, and freeze one to use later. Serve these with horseradish.

1 pound ground ham
1 pound ground pork
2 cups cracker crumbs
1 cup milk
2 eggs, lightly beaten
1 cup brown sugar
1 cup cider vinegar
½ cup water
1 tablespoon dry mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine ground ham and pork in a bowl; stir in cracker crumbs, milk, and eggs. Shape mixture into 14 small oval loaves. Place loaves into prepared baking dish.
  • Mix brown sugar, cider vinegar, water, and dry mustard in a bowl, stirring until brown sugar has dissolved. Pour mixture over ham loaves.
  • Bake in the preheated oven for 1 hour; flip and bake until juices run clear and an instant-read meat thermometer inserted into the center of a loaf reads 160 degrees F (70 degrees C), about 30 more minutes.

2 slices dried bread (crumbled)
1/2 cup milk
2 eggs
3/4 cup brown sugar
1/4 cup vinegar
1/3 cup water
1/2 teaspoon dry mustard

Steps:

  • Combine ham, pork, bread, milk and eggs.
  • Shape into six little loaves and place in baking pan.
  • Combine brown sugar, vinegar, water and dry mustard.
  • Pour over meatloaves.
  • Bake at 350 for 1 hour and 15 minutes, basting often with sauce.

1 medium onion, quartered
1 small tomato, seeded and quartered
1/4 cup packed fresh parsley sprigs
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
3 dashes hot pepper sauce
1 large egg, lightly beaten
2-1/2 pounds ground beef
8 thin slices deli ham
8 slices Gruyere or Swiss cheese
GLAZE:
1 cup ketchup
1/4 cup Dijon mustard
1 teaspoon balsamic vinegar

Steps:

  • Preheat oven to 350°. Place first nine ingredients in a food processor; process until blended. Transfer to a large bowl; stir in egg. Add beef; mix lightly but thoroughly (mixture will be soft)., Divide mixture into eight portions. On a piece of parchment paper, pat each portion into a 5-in. square; layer with ham and cheese to within 1 in. of edges. Roll up jelly-roll style, starting with a short side and peeling away paper while rolling. Pinch seam and ends to seal. Place on a rack in a roasting pan, seam side down., Mix glaze ingredients; brush over loaves. Bake until a thermometer inserted in meat loaf reads 160°, 30-40 minutes.

1 lb ground lean pork

1 1/2 c fresh bread crumbs
1/2 to 3/4 cup milnot
garlic powder to taste
pepper to taste
parsley to taste
6 oz undiluted frozen orange juice
1 c brown sugar
1 Tbsp vinegar

Steps:

  • 1. Combine ham, pork, eggs, bread crumbs, Milnot, and spices (no salt necessary) well in large mixing bowl. Form into small oval-shaped loaves. Bake the loaves at 350 degrees for 30 minutes. I formerly belonged to the Kiski Twp Unit of the American Legion Auxiliary...this was a favorite recipe used to serve at dinners held there. You can increase measurements to make this for a larger group. The optional dressing was not used there, I came up with that one.

2 lb ground pork
1 lb ground ham
2 beaten eggs
1 c seasoned bread crumbs
2 Tbsp tomato paste or ketchup
2 Tbsp chopped onions (can use dehydrated flakes)
1 can(s) cream of tomato soup
1 soup can water
************SAUCE (OPTIONAL)
1 Tbsp bottled horseradish
1-1/2 c sour cream
1-2 Tbsp prepared mustard

Steps:

  • 1. Preheat oven to 350°F.
  • 2. Have store grind the pork and ham together for you. Mix all ham loaf ingredients together, form into small loaves and place in baking pan. Combine soup and water, pour over meat. NOTE: if using the optional sauce, ignore this step and just use a cup of water in baking pan.
  • 3. Bake about 45-60 minutes, covered with foil, or until completely cooked.
  • 4. Combine horseradish, sour cream, and mustard to serve as accompanying sauce. Can substitute fresh dill for the mustard, if desired.
