- For the sauce: Stir together the mayo, teriyaki sauce, honey and cayenne in a small bowl. Set aside.
- For the burgers: Set a grill pan over medium-high heat (you can also use a skillet).
- Grill the pineapple and bell pepper rings until they have great grill marks on both sides (or brown them in the hot skillet), about 5 minutes.
- Season the ground beef and form it into 4 equal-size patties. Cook them over medium heat on the grill for 4 to 5 minutes on the first side, then flip them over and add a splash of teriyaki sauce on top of each one. Place a slice of cheese on each patty and let it melt while the burger cooks through, about 4 minutes longer.
- Butter a griddle or separate skillet set over medium heat. Place the rolls cut-side down and cook until brown, about a minute.
- Spoon a little bit of the sauce on both sides of the rolls and allow it to soak into the bread. Place the patties on the bottom buns and top each with 2 pineapple slices and some red onion slices, bell pepper rings and lettuce. Top with the top buns and smush it all together. Serve with extra sauce for dipping.

- Add the teriyaki sauce to a bowl and stir in the ginger, brown sugar, crushed red pepper, garlic, lime juice, a pinch of salt and half of the green onions; set aside.
- Using wooden skewers that have been soaked in water for at least an hour, assemble your skewers. Start with a piece of chicken, then add a piece of bell pepper and a piece pineapple, then repeat until you 2 pieces of each on the skewer. Continue with the remaining ingredients for a total of 30 skewers. Season the skewers with salt and pepper and brush them with the marinade on one side.
- Heat a grill pan over medium-high heat and brush with olive oil. Arrange the skewers on the grill sauce-side down (in batches if necessary) and grill for 3 minutes. While the skewers are cooking, brush the tops with the remaining marinade. After 3 minutes, flip and cook the other side for an additional 3 minutes. Remove to a serving platter and garnish with the remaining green onions.

- Shape ground beef into eight small patties; sprinkle with salt and pepper. In a large nonstick skillet, cook burgers over medium heat until a thermometer reads 160°, 3-4 minutes on each side. Meanwhile, bake curly fries according to package directions. When cool enough to handle, cut fries in half., Add a half slice of cheese to each burger; cook until slightly melted, about 1 minute. Place burgers on rolls. Using toothpicks, attach curly fries to rolls to look like antennas and arms, and attach olives to look like eyes. Serve with ketchup.

SWEET HAWAIIAN MINI BURGERS

- 1. Adult help needed: ADJUST the oven rack so the surface of the broiler pan is about 4 inches from the broiler. TURN the oven to the broiler setting.
- 2. PLACE the ground beef and Worcestershire sauce in a medium bowl. MIX lightly with a rubber spatula, but not too much. DIVIDE the beef mixture into 12 equal portions. SHAPE each portion into mini burgers about 1/2-inch thick. SET ASIDE on a baking sheet. WASH your hands thoroughly.
- 3. To make the sauce, PLACE the barbeque sauce, pineapple preserves and brown sugar in a glass 1-cup measuring cup. STIR with a spoon to mix well.
- 4. Adult help needed: PLACE the measuring cup in the microwave oven. MICROWAVE uncovered for 40 to 60 seconds or until hot. Careful! Measuring cup will be very hot! - 5. Adult help needed: LAY the pineapple slices on the rack in the broiler pan. BRUSH with some of the remaining sauce. PLACE the broiler pan in the oven. BROIL 2 minutes. Careful! Broiler pan will be very hot! Using pot holders, REMOVE the broiler pan and TURN the pineapple slices over with metal tongs. BRUSH with more of the sauce. BROIL 2 minutes more. Using pot holders, REMOVE the broiler pan. PLACE pineapple slices on a plate and cover with aluminum foil to keep warm.
- 6. Adult help needed: PLACE the burgers on the same broiler pan. PLACE the broiler pan in the oven. BROIL 4 minutes. Careful! Broiler pan will be very hot. Using pot holders, REMOVE the broiler pan and TURN the burgers over with a metal spatula. BROIL 3 to 4 minutes more, until the burgers are no longer pink in center and juices show no pink color. The burgers are done when a food thermometer stuck into the burgers reads 160 degrees. Using pot holders, REMOVE the broiler pan. BRUSH the burgers with the rest of the sauce.
- 7. Adult help needed: While the burgers are cooking, use a sharp knife and cutting board to carefully SLICE the rolls in half. CUT each pineapple slice into 3 equal pieces. TEAR the lettuce leaves into smaller pieces to fit in the rolls.
- 8. PLACE the sliced rolls on a serving platter. LAY some lettuce on the bottom of each roll. PUT a burger on top of the lettuce, then TOP the burger with a pineapple piece. PLACE the roll top on the pineapple and PRESS down slightly to hold the bun in place. SERVE with the sauce that was set aside in step 4.
