  • Preheat oven to 350 degrees F (175 degrees C).

1 10-ounce package white mushrooms
1 pound ground beef sirloin (90% lean)
1 large egg
1/4 cup chopped fresh parsley
2 teaspoons paprika, plus more for topping
1 1/2 teaspoons Worcestershire sauce
Kosher salt and freshly ground pepper
1 cup orzo
1 tablespoon plus 1 teaspoon extra-virgin olive oil
2 tablespoons chopped fresh sage
1/4 cup plain whole-milk yogurt, well stirred

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with foil. Pulse the bread with half of the mushrooms in a food processor until fine; transfer to a large bowl. Add the beef, egg, 1 tablespoon parsley, the paprika, Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper. Mix with your hands until just combined. Form into four 3-by-4-inch mini meatloaves; transfer to the prepared baking sheet. Bake until browned and cooked through, about 15 minutes.
  • Meanwhile, bring a medium saucepan of salted water to a boil. Add the orzo and cook as the label directs. Reserve 3/4 cup cooking water, then drain the orzo.
  • Slice the remaining mushrooms. Heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the mushrooms and cook, undisturbed, until they just start browning, 2 to 3 minutes. 1/3 cup old-fashioned oats
4 tablespoons ketchup
1 tablespoon spicy brown mustard

2 large egg whites
1 medium red onion, grated (about 1/3 cup)

Steps:

  • Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
  • Gently combine the pork and turkey by hand in a large bowl. 2 tablespoons all-purpose flour
2 cups beef stock
2 tablespoons Worcestershire sauce

  • Preheat the oven to 425 degrees F.
  • In a large bowl, add the bread and the milk and let soak for a few minutes then wring out the moisture. In another large mixing bowl add the meat and the soaked bread. Add the egg, salt and pepper, to taste, the garlic, parsley, cheese and a drizzle of extra-virgin olive oil. Mix to combine and form into 4 mini oval loaves, about 2-inches thick.

4 tsp olive oil
1 onion , finely chopped
1 carrot , finely chopped
50g fresh breadcrumb
175ml passata
2 tsp Worcestershire sauce
1 egg , beaten
500g lean beef or pork mince
2 tsp thyme leaves
2 plum tomatoes , halved, seeds scraped out
1 tsp sugar

Steps:

  • Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
  • Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
