Wooden skewers, soaked in water for 30 minutes
6 shrimp, deveined
1/4 cup favorite seafood seasoning mix
8 ounces Italian dressing
2 ounces Worcestershire sauce
2 ounces honey

Steps:

  • Preheat a grill.
  • On wooden skewers, place deveined, curled shrimp, and season with your favorite seafood seasoning mix.
  • In bowl, mix Italian dressing, Worcestershire sauce, and honey. Heat lightly in the microwave.

2 medium sweet potatoes (about 1-1/4 pounds)
2 tablespoons plus 1/4 cup olive oil, divided
1-1/2 teaspoons minced fresh rosemary
1 teaspoon chili powder, divided
3 tablespoons lemon juice
12 uncooked jumbo shrimp (about 3/4 lb.), peeled and deveined
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400°. Peel and cut potatoes into 1-inch cubes (about 24 cubes). Toss with 2 tablespoons oil, rosemary and 1/2 teaspoon chili powder. Transfer to a greased 15x10x1-in. baking pan. Roast 20-25 minutes or until almost tender, stirring occasionally. Cool slightly., Meanwhile, in a small bowl, whisk lemon juice and the remaining oil and chili powder until blended. Reserve 2 tablespoons marinade for basting. Add shrimp to remaining marinade and toss to coat. Refrigerate, covered, 20 minutes., On each of 12 soaked wooden appetizer skewers, thread sweet potato and shrimp. ¼ cup olive oil
1 tablespoon minced garlic
2 teaspoons lemon juice
¼ teaspoon pepper
1 pinch finely chopped parsley

1/4 cup honey
1 tablespoon minced canned chipotle chile in adobo
2 garlic cloves, minced
1/2 teaspoon kosher salt
1 lb large shrimp, shelled and deveined
2 tablespoons minced fresh cilantro

Steps:

  • In a large bowl, combine the honey, chile pepper, garlic and salt. Add the shrimp and toss to coat. Cover and marinate at room temperature for 20 minutes or in the refrigerator for 1 hour. Remove from the marinade and discard any remaining marinade.

1/3 cup apricot jam, all-fruit, no sugar added
1 tablespoon rice vinegar
