Tips:

  • Use a sharp knife to cut the bell peppers and onions. This will help to ensure that the vegetables are evenly cut and cook evenly.
  • Cook the sausage and vegetables until they are browned. This will help to develop the flavor of the filling.
  • Use a refrigerated pie crust to save time. If you are using a homemade pie crust, be sure to chill it before rolling it out.
  • Cut the pie dough into 12 equal pieces. This will help to ensure that the hand pies are all the same size.
  • Fill each pie dough circle with about 1/4 cup of the sausage and vegetable filling. Be sure to leave a 1/2-inch border around the edge of the dough.
  • Fold the pie dough circles in half and crimp the edges to seal. Be sure to seal the edges tightly so that the filling does not leak out.
  • Place the hand pies on a baking sheet lined with parchment paper. This will help to prevent the pies from sticking to the pan.
  • Bake the hand pies at 400 degrees Fahrenheit for 20-25 minutes, or until the crust is golden brown.
  • Let the hand pies cool for a few minutes before serving. This will help to prevent the filling from spilling out.
