1 peppermint candy cane, crushed (6 inch)

Steps:

  • MICROWAVE chocolate in small microwaveable bowl as directed on package. Stir until completely melted. Blend in extract.
  • DIP crackers in melted chocolate, completely coating crackers with chocolate. Carefully scrape off excess chocolate. Place on waxed paper-covered baking sheets; sprinkle with crushed candy.

10 ounces vegan semisweet chocolate chips (such as Nestle® Toll House® Simply Delicious)
1 tablespoon coconut oil
1 teaspoon peppermint extract
36 buttery round crackers (such as Ritz®)

Steps:

  • Line baking sheets with parchment paper.
  • Combine dark chocolate chips, semisweet chocolate chips, and coconut oil in a large microwave-safe bowl. Heat in a microwave oven for 1 minute and stir. Continue heating 30 seconds at a time, stirring after each heating, until chips are melted and smooth. Add peppermint extract and stir.

1 lb chocolate-flavored candy coating (I use Plymouth Pantry that I buy at Wal-Mart or Wilton Candy Melts)
1 tablespoon vegetable shortening (I use Crisco)
3 drops peppermint oil (I use Lorann Oils that I buyat Wal-Mart)
65 Ritz crackers

Steps:

  • Melt chocolate coating.
  • I melt mine in a large bowl in the microwave.
  • Stir in the peppermint oil and the shortening.
  • Dip Ritz crackers in chocolate cover completely.
  • Place coated crackerers on waxed paper and let sit until chocolate is hard.
  • Store in air tight container.

Steps:

  • Using a double boiler method, melt the chocolate coatings over hot tap water for 15 - 20 minutes. Stir . Do not cook or get water into the chocolate.
  • After it is melted, stir in a couple drops of peppermint flavor into the chocolate.
