2 tablespoons sour cream
1 tablespoon freshly grated lemon zest
2 teaspoons coarse-ground mustard
2 teaspoons fresh lemon juice (to taste)
24 slices white bread, very thin (homemade is best)
1 cup mint leaf, cleaned and dried on paper towels
16 radishes, trimmed and sliced as thinly as possible

Steps:

4 large red radishes, ends trimmed, halved and thinly sliced
Coarse salt and ground pepper
4 leaves Bibb lettuce, or butter lettuce, ribs removed
