Time 30m

Yield 5 serving(s)

Number Of Ingredients 6

1 (13 ounce) potatoes
3 cups cauliflower florets
3 tablespoons fat-free half-and-half
1 tablespoon light butter, whipped (or light buttery spread)
1/4 teaspoon salt (with additional salt and pepper to taste)
1/2 teaspoon garlic, crushed (optional)

Steps:

  • Bring a large pot of water to a boil. While waiting for the water to boil, peel and cube the potato.
  • Once water is boiling, add peeled potato cubes and cauliflower. Wait for the water to return to a boil, and then reduce heat to medium. Cook for 15 - 20 minutes (until potatoes and cauliflower are very tender).
  • Remove the pot from heat and strain out all of the water. Transfer contents to a large bowl, and add half & half, butter/buttery spread, salt, and (if you like) crushed garlic. Mash it all together with a potato masher, until completely blended. Season to taste with pepper and additional salt. Enjoy!

Tips:

  • Choose the right potatoes: Look for small, firm potatoes with thin skin, such as Yukon Gold or red potatoes.
  • Wash the potatoes thoroughly: Scrub the potatoes under running water to remove any dirt or debris.
  • Cut the potatoes into even-sized pieces: This will help them cook evenly.
  • Parboil the potatoes: This will help them cook faster and more evenly. To parboil the potatoes, place them in a pot of cold water and bring to a boil. Boil for 5-7 minutes, or until the potatoes are tender when pierced with a fork. Drain the potatoes and let them cool slightly.
  • Season the potatoes: Before roasting, toss the potatoes with olive oil, salt, pepper, and any other desired seasonings.
  • Roast the potatoes at a high temperature: This will help them get crispy on the outside and fluffy on the inside. Roast the potatoes at 425 degrees Fahrenheit for 20-30 minutes, or until they are golden brown and tender.
