1/4 heaping cup unsweetened cocoa powder
1 cup boiling water
2 cups all-purpose flour
2 cups granulated sugar
1/4 teaspoon kosher salt
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla extract
2 large eggs
One 10-ounce bag mini marshmallows (about 6 cups)
1 3/4 sticks (14 tablespoons) salted butter
6 tablespoons whole milk
1/4 heaping cup unsweetened cocoa powder
4 cups sifted confectioners' sugar
1 cup chopped toasted pecans
1 tablespoon vanilla extract

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Grease a 9-by-13-inch glass baking dish with cooking spray.
  • In a saucepan, melt the butter. Whisk in the cocoa powder, then the boiling water. Let it bubble up for a few seconds, then turn it off and set it aside.
  • In a large bowl, mix together the flour, granulated sugar and salt. Pour the chocolate mixture over the flour mixture and stir a few times to start to cool the chocolate.

1/4 pound unsalted butter
1 (16 ounce) box confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F and lightly grease a 9 by 13-inch cake pan.

CAKE INGREDIENTS
2 c flour
2 c sugar
2 tsp baking soda
1/4 tsp salt
1/3 c cocoa
1 c buttermilk ( or 1 tbsp vinegar to 1 cup milk, let sit for an hour)
1 c vegetable oil
1 c boiling water
1 tsp vanilla
2 eggs
ICING INGREDIENTS
1 c sugar
2 Tbsp light corn syrup
1/4 c milk
2 Tbsp butter
1/2 pkg chocolate chips (6 oz.)
1 tsp vanilla
miniature marshmallows
1/3 c chopped nuts, optional

Steps:

  • 1. Turn the oven on to 350 degrees. Grease and flour a 9x13 inch pan.
  • 2. Mix together flour, sugar, soda, salt and cocoa. Then, add buttermilk, oil, boiling water, vanilla and eggs. Beat thoroughly and pour into the greased and floured pan. (If the batter seems a little thin, you are right on track! :-) Bake 35-45 minutes, testing with a toothpick to determine doneness.
  • 3. Start the icing 5 minutes before the cake is done. Combine sugar, corn syrup, milk and butter in a saucepan and boil 2 minutes (no longer) then add the chocolate chips, vanilla, and nuts. Mix until the chocolate chips are melted.

  • Put 1 cup butter or margarine into large mixing bowl. Microwave on high 1 to 1 1/2 minutes until melted.

Cake
1 1/2 cups (3 sticks) unsalted butter, room temperature
1 1/2 cups firmly packed dark brown sugar
1 cup sugar
3 ounces unsweetened chocolate, chopped, melted
1/4 cup whipping cream
2 teaspoons vanilla extract
6 large eggs, room temperature
2 1/4 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 cups mini marshmallows
2 cups coarsely chopped toasted pecans (about 7 ounces)
Frosting
1 cup firmly packed dark brown sugar
1 cup whipping cream
1/2 cup (1 stick) unsalted butter, cut into pieces
5 ounces unsweetened chocolate, chopped
2 ounces bittersweet (not unsweetened) chocolate, chopped
2 tablespoons dark corn syrup
1 teaspoon vanilla extract

Steps:

  • For Cake:
  • Preheat oven to 350°F. Line two 9-inch square cake pans with 2-inch-high sides with foil, extending foil over sides. Butter and flour foil. Using electric mixer, cream butter and both sugars in large bowl until fluffy. Beat in melted chocolate, cream and vanilla. Add eggs 1 at a time, beating well after each addition. Sift flour, cocoa, baking soda and salt into medium bowl. Stir dry ingredients into batter, which will be very thick. Divide batter between prepared pans; spread evenly. Bake until tester inserted into centers comes out clean, about 20 minutes. Remove from oven. Sprinkle 1 1/2 cups marshmallows and 1 cup pecans over each cake. Bake just until marshmallows begin to melt, about 6 minutes. Transfer to racks. Cool cakes completely in pans.
  • For Frosting:
  • Combine sugar and cream in heavy medium saucepan. Stir over medium heat until sugar dissolves. Cook without stirring until candy thermometer registers 220°F., about 8 minutes. Remove from heat and whisk in remaining ingredients. Whisk until all chocolate melts and frosting is smooth. Refrigerate frosting until spreadable, about 1 hour 15 minutes. Using foil as aid, lift cakes from pans. Remove foil. Place 1 cake layer on plate, marshmallow side up. Spread 1 1/2 cups frosting over. Top with second cake layer, marshmallow side up. Spread remaining frosting in waves on sides (not top) of cake. (Can be prepared 1 day ahead. Cover with cake dome and chill. Bring to room temperature before serving.)

2 teaspoons baking soda
1 teaspoon salt
1 cup unsalted butter, cut into pieces
6 ounces unsweetened chocolate, finely chopped
1/2 cup brewed espresso or very strong coffee
1 1/2 cups sugar
1/2 cup bourbon
4 large eggs
2 teaspoons vanilla extract
For glaze
6 tablespoons unsalted butter, cut into pieces
6 tablespoons (packed) golden brown sugar
2 teaspoons instant espresso powder
6 tablespoons whipping cream
1 1/2 cups powdered sugar, sifted
2 tablespoons bourbon
Vanilla ice cream

Steps:

  • Make cake:
  • Preheat oven to 350°F. Butter 12-cup Bundt pan. Mix flour, baking soda and salt in medium bowl. Combine butter, chocolate and brewed espresso in heavy medium saucepan. Stir over low heat until chocolate and butter melt (mixture may look curdled). Remove from heat. Add sugar and bourbon. Whisk until sugar dissolves and mixture is smooth. Using electric mixer, beat eggs and vanilla in large bowl until blended. Gradually beat in chocolate mixture. Add flour mixture and stir just until blended. Transfer batter to pan; smooth top.
  • Bake cake until tester inserted near center comes out clean and cake begins to pull away from sides of pan, about 45 minutes. Cool in pan on rack 15 minutes. Invert cake onto rack; cool completely.
  • For glaze:
  • Stir butter, golden brown sugar and instant espresso powder in small saucepan over medium heat until butter melts. Stir in cream. Simmer 1 minute. Remove from heat. Gradually add powdered sugar, whisking until smooth. Mix in bourbon. Cool slightly. Place cake atop rack on baking sheet. Slowly drizzle glaze over cake, allowing glaze to run down sides of cake and cover as much of cake as possible. Spoon any glaze drippings from baking sheet over cake. Let stand 30 minutes. (Can be prepared 2 days ahead. Cover with cake dome. Let stand at room temperature.)
  • Serve cake with vanilla ice cream.

I have made this often but I must confess I do not eat it because I don't like coconut (good diet dish -- for me at least -- to bring to pot luck) -- people who will eat coconut always rave about this.

1 cup margarine
2 cups sugar
2 tablespoons cocoa
4 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 1/3 cups shredded coconut
1 1/2 cups chopped pecans or 1 1/2 cups other nuts
1 (7 ounce) jar marshmallow creme
1 (16 ounce) box powdered sugar
1 teaspoon vanilla
1/2 cup Milnot Condensed Milk
1/3 cup cocoa
1/2 cup margarine

Steps:

  • For Cake: Cream together margarine, sugar and cocoa.
  • Add 4 eggs and vanilla; mix well.
  • Add flour, coconut, chopped nuts and beat 1 to 2 minutes.
  • Bake@ 350 degrees for 30 to 40 minutes.
  • While still hot, spread a jar of marshmallow creme over cake.
  • For Icing: Mix together all ingredients for icing and spread over cake.

1/3 cup cocoa

1/3 cup chopped pecans
1 (7 ounce) jar marshmallow cream
1/2 cup butter, melted
1/3 cup cocoa
1 teaspoon vanilla
6 tablespoons milk
1 lb sifted confectioners' sugar (4 cups)

Steps:

  • ~ForIcing~.
  • Stir together icing ingredients in a bowl until smooth.
  • ~ForCake~.
  • Beat eggs until thickened.
  • Gradually beat in sugar.
  • Sift flour mixture and cocoa together.
  • Stir melted butter, vanilla, coconut and pecans into flour mixture, then add to egg mixture and stir well.
  • Pour into greased 9 x 13 inch pan and bake at 350F (medium oven) for 35 minutes or until toothpick inserted in center comes out clean.
  • Remove from oven and immediately spread with marshmallow cream.
  • Gently spread Sugared Cocoa Icing over marshmallow cream.

1 tsp baking soda
1/2 tsp salt
2 stick butter
1/3 c cocoa powder
1 c water
1/2 c buttermilk
2 large eggs, slightly beaten
1 tsp vanilla extract
8 oz mini marshmallows
FROSTING
1 stick butter
1/3 c cocoa powder
1/2 c buttermilk
16 oz confectioners sugar
1 tsp vanilla extract
1 pinch salt
3/4 c chopped nuts

Steps:

  • 1. Preheat oven to 350º Lightly grease 9x13 baking pan
  • 2. CAKE DIRECTIONS: Sift flour, sugar, baking soda and salt into a medium mixing bowl. Set aside Melt butter in small sauce pan; when melted, add cocoa and water and bring to a boil Add boiling cocoa mixture to dry ingredients and stir until just combined Add buttermilk, eggs, and vanilla and stir until smooth Pour into greased pan and bake 35-40 minutes until toothpick inserted in center comes out clean Remove from oven onto cooling rack !!DO NOT REMOVE CAKE FROM PAN!! Sprinkle marshallows evenly onto hot cake
  • 3. FROSTING DIRECTIONS: Melt butter in medium saucepan; when melted add cocoa powder and buttermilk Bring to boil, then remove from heat Add powdered sugar, vanilla and salt stirring until very smooth Pour over marshmallows on hot cake Sprinkle with nuts

2 cups unbleached all-purpose flour
1 teaspoons baking soda
2 teaspoons instant espresso powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, cut into pieces
6 ounces unsweetened chocolate, finely chopped
1/2 cup brewed espresso
1 1/2 cups granulated sugar
1/2 cup bourbon
4 large eggs
1 teaspoon pure vanilla extract
3/4 cup mini chocolate chips (I used mocha chips)
6 Tablespoons (3/4 stick) unsalted butter, cut into pieces
6 Tablespoons packed light brown sugar
2 teaspoons instant espresso powder
6 Tablespoons heavy cream
1 1/2 cups confectioner's sugar
2 Tablespoons bourbon

Steps:

  • NOTES: Making the glaze, first, yielded better results. By allowing it to cool, it becomes much thicker. In fact, you can make the glaze a day ahead of time and bring to room temperature. Make the glaze: Stir the butter, brown sugar, and espresso powder* together in a small saucepan over medium heat until the butter is melted. Whisk in the cream and bring to a simmer. Cook for 1 minute, remove from the heat, and whisk in the confectioner's sugar until sooth. Mix in the bourbon. Let cool for 10 minutes. *I order my espresso powder for King Arthur Flour's website. TASTING NOTES: I used half the amount of bourbon, with good results. I found that 10 minutes was NOT enough time for the glaze to cool so that it would be thick. I'd give it at least an hour or more; otherwise the glaze just absorbs into the cake. The glaze is so good, it's delicious drizzled over vanilla ice cream! Make the cake: Preheat the oven to 350F. Grease a 12-cup Bundt pan and dust with flour (I use Baker's Joy spray for perfect results). Combine the butter, chocolate, and espresso in a medium saucepan. Heat over medium, stirring, until the butter and chocolate are melted. Remove from the heat and stir in the granulated sugar and bourbon. Place the eggs and vanilla in a large mixing bowl and beat with an electric mixer on low to break up the eggs. Beat in the chocolate mixture. Add the flour mixture and stir until just combined. Stir in the chocolate chips. Scrape the batter into the prepared pan and smooth the top with a spatula. Bake until a toothpick inserted into the center of the came comes out clean, about 45 minutes. (NOTE: My cake was fully baked in 39 minutes, so keep a close on it!) Let the cake cook in the pan for 5 minutes and then invert onto a wire rack to cool completely. Place the cake, still on the wire rack, over a baking sheet. Slowly drizzle the glaze over the cake, letting it run down the sides of the cake and covering as much of the cake as possible. Let stand until the glaze is set, about 1/2 hour. Slice and serve. Store uneaten cake in a cake keeper or wrap in plastic and store at room temperature for up to 3 days.

16 oz confectioners sugar
1/8 c rum or bourbon
1/2 c chopped nuts

Steps:

  • 1. Preheat oven to 350º Grease and flour a 9x13 baking pan
  • 2. CAKE; Using an electric mixer, cream butter and sugar together until light and fluffy Add eggs one at a time, beating well after each addition Sift flour, baking powder and salt together in another bowl Add flour to creamed butter mixture, continuing to beat Add vanilla and chocolate syrup to batter and mix well Pour into prepared pan and back 25-30 minutes until toothpick inserted in center comes out clean Remove cake from oven and place on cooling rack (DO NOT REMOVE CAKE FROM PAN) While still hot spread marshmallows evenly over surface
