2 pounds ripe plum tomatoes, cored and halved lengthwise
Kosher salt
Fresh herb sprigs, such as thyme, rosemary or sage
About 3/4 cup extra-virgin olive oil
1/2 baguette, cut into 24 1/3-inch-thick slices
1 clove garlic
6 to 8 ounces various sliced cheeses, such as goat cheese, Gorgonzola, mozzarella, Comte, Gouda or Camembert

Steps:

  • Preheat the oven to 250 degrees F.
  • Arrange the tomatoes, cut-side up, in a single layer on a parchment or foil-lined baking sheet. Sprinkle with salt. Bake until slightly shriveled but still plump, about 5 hours. Layer them with the herb sprigs in a container, add olive oil to cover, seal tightly and refrigerate for up to 2 weeks.
  • Preheat the oven to 400 degrees F.
  • Brush both sides of the bread slices with some of the flavored olive oil and place on a baking sheet. Bake until golden, about 7 minutes, turning once about halfway through. While the toasts are hot, rub both sides with the whole garlic clove, placing them back on the baking sheet as you work. Leave the oven on.
  • Put a tomato and a small slice of cheese on each toast - it's yummy either with the tomato on the cheese or with the cheese on top. Bake just until cheese starts to melt, about 3 minutes. Serve warm.

12 yellow cherry tomatoes, cut into sixths

1 serrano chile or 1/2 jalapeno pepper, seeds and ribs removed, minced
2 tablespoons chopped fresh cilantro
2 tablespoons fresh lime juice

Pinch of freshly ground pepper
1/2 cup loosely packed fresh basil leaves, plus small sprigs for garnish

250g pot fresh crab meat
85g cherry tomato , quartered
1 small red onion , finely chopped
zest and juice 1 lime
2 tbsp olive oil
bunch coriander , chopped
4 thin baguettes
splash of olive oil

  • Mix together the crab meat, tomatoes and red onion. Keep in the fridge for up to 2 days. On the day, mix through the lime zest, juice and chopped coriander, then pile onto the crostini to serve.
  • For the crostini bases, cut each of the 4 baguettes into 20 slices, ½cm thick, discarding ends. Drizzle with olive oil and place under the grill. Cook for 2-3 mins until lightly golden, then turn over and cook for another 1-2 mins until golden and crisp all over.
