Categories     Main Dish

Time 10m

Number Of Ingredients 12

5 oz chunk light tuna canned in water, drained
1/8 tsp garlic powder
1/8 tsp dried minced onion or onion powder
a dollop of mayo or greek yogurt ((start with just a little and only add more if you need it!))
1 tsp plain yellow mustard ((extra if desired))
salt and pepper to taste
shredded carrots
shredded radish
finely chopped or shredded celery
finely chopped white or red onion
chopped kosher dill pickles
add a little... or a lot!

Steps:

  • Drain your tuna.
  • Chop your veggies.
  • Combine with remaining ingredients and mix well.
  • To make into a super flavorful sandwich that rivals your local deli, combine all ingredients, spread onto fluffy rye bread with a little mustard, top with arugula or romaine lettuce and dig in! Tuna and rye are a match made in heaven so hunt down some whole grain rye instead of the typical white bread. If you have 'em, onion and tomato are also di-vine piled on top of this sandwich. Use what you have and, as always, have fun with it! A colorful lunch is a satisfying lunch.

Time 10m

Number Of Ingredients 11

1 5-ounce can white meat tuna
1/4 cup finely chopped celery
2 tablespoons finely chopped red onion
1/4 cup finely chopped dill pickles
1/4 cup Greek yogurt plus 2 tablespoons mayonnaise (or 1/2 ripe avocado; see Step 3)
2 teaspoons lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon kosher salt
1 tablespoon shredded Parmesan cheese (optional)
1 chopped hard boiled egg (optional)
4 slices bread, for serving (like artisan, no knead, whole wheat, sandwich, or sourdough)

Steps:

  • Drain the tuna. Place it in a bowl and use a fork to break apart any large clumps.
  • Finely chop the celery, red onion, and dill pickles.
  • For Classic Tuna Salad, use a fork to mix together the tuna and chopped vegetables with the Greek yogurt, mayo, lemon juice, Dijon mustard, and kosher salt. Add shredded Parmesan if desired (it really steps it up a notch!). For Tuna Salad with Egg, add chopped hard boiled egg. For Avocado Tuna Salad, use 1/2 chopped ripe avocado instead of the Greek yogurt and mayo, and skip the Parmesan.
  • Lightly toast the bread, if desired. Spoon the tuna salad onto the bread and serve.

A friend passed this on from an old cookbook, and I love it! It doesn't taste exactly like tuna, but it's similar. It's great for a sandwich, very easy to make, and high in protein. If you're trying to make it super healthy, go for low-fat mayo.
