She gave it to me in the 70's ,but I know it is older than that- because it took me quite a while to weedle it out of her! lol - she always brought it to group gathering, but would never give it out, until then.....

CHICKEN-LIVER PâTé

Chicken-Liver Pâté image

You could serve this chicken pâté as an appetizer at a dinner party, or simply as a light (really!) supper or a sandwich spread. It takes less than a half-hour to prepare, and it will firm up in the refrigerator in a few hours. Simply pack the mixture into a bowl or glass jar, cover and refrigerate.

Provided by Sam Sifton

Categories     dinner, dips and spreads, appetizer, main course

Time 20m

Yield 6 to 8 servings

Number Of Ingredients 7

8 tablespoons unsalted butter, cut into cubes
2 medium shallots, peeled and finely chopped
1 pint fresh chicken livers, approximately 1 pound, trimmed
1 tablespoon fresh thyme leaves, chopped
1/3 cup Madeira or port
3 tablespoons heavy cream, plus more as needed
Kosher salt to taste

Steps:

  • Put a large, heavy sauté pan over medium heat, and melt 4 tablespoons of the butter until it begins to foam. Add the shallots, and sauté them until translucent, being careful not to allow them to brown. Add the livers, thyme and Madeira or port, and bring the heat to high. Cook, occasionally stirring the livers around in the pan with a spoon, until the wine has reduced and the livers are lightly browned but still very soft and pink on the inside, approximately 5 minutes.
  • Remove the pan from the stove, and put its contents into a blender or food processor, along with the cream and the remaining butter. Purée until smooth, adding a little more cream if necessary. Taste and adjust seasoning, adding salt if necessary.
  • Pack the pâté into a glass jar or bowl, then smooth the top with a spatula. Cover with plastic wrap and refrigerate until firm, about two hours or up to five days. Serve with bacon-onion jam and copious amounts of toast.

MOCK CHICKEN LIVER PATE

MOCK CHICKEN LIVER PATE image

Categories     Condiment/Spread     Bean     Appetizer     Sauté     Vegetarian

Number Of Ingredients 7

2 Cups Water
1 Cup Dried Lentils
2 Chicken Bouillon Cubes
1 Tsp EVOO
1 Large Onion, chopped
1 Cup Walnuts
S&P To taste

Steps:

  • Place water, lentils, and bouillon cubes in a pot. Bring to a boil, reduce heat to a simmer, and cook about 30 minutes, until tender (but not mushy.) Drain well. Saute the onion in olive oil in a skillet until it becomes transparent. Combine all ingredient a food processor and grind until the texture is as preferred. Season to taste with salt and pepper. Chill. Extras: I usually dry toast the walnuts in a skillet until the nuts were beginning to color and they were fragrant. When the onions were almost done, I splashed about a jigger of brandy over them and reduced that until the onions were almost dry and then did that again. I seasoned the onions over heat with about 1 tsp each dried thyme, smoked paprika, and garlic powder. I added about a half teaspoon of ground allspice. I added a Tbs of brandy when I processed the ingredients. Options: I have added 1/2 to 1 tsp cumin because it adds a "meaty" flavor. I have also added chopped fresh sage when I have it. I have added chopped parsley. I have added a bit of lemon juice when the Pate`needed "something." The mayo sauce was Hellmann's lo fat Mayonnaise and sweet/spicy mustard (about 4 to 1) mixed together. Capers would be good on top or mixed in.

Tips:

  • Choose the right mushrooms. Cremini mushrooms are a good choice because they have a meaty texture and earthy flavor. You can also use shiitake or oyster mushrooms.
  • Sauté the mushrooms until they are browned. This will help to develop their flavor and give the pâté a richer color.
  • Use a food processor to grind the mushrooms and other ingredients until they are smooth. You can also use a blender, but a food processor will give you a finer texture.
  • Season the pâté to taste. You can use salt, pepper, garlic powder, onion powder, and other spices to taste.
  • Serve the pâté immediately or store it in the refrigerator for later. The pâté will keep for up to 3 days in the refrigerator.

Conclusion:

Mock chicken liver pâté is a delicious and versatile dish that can be served as an appetizer, main course, or snack. It is a great way to use up leftover mushrooms and it is also a good source of protein and fiber. With its rich flavor and creamy texture, this pâté is sure to please everyone at your table.
