SUPER MOIST FRESH APPLE CAKE
This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

MOIST APPLE CAKE
This appetizing apple cinnamon cake, draped with a warm brown sugar sauce, is a crowd-pleaser at parties or at the office, confirms Lisa Miller from West Chester, Ohio. "I adapted a friend's recipe by decreasing the oil and substituting applesauce," she notes. "I also switched to fat-free milk...but no one will ever guess this treat is light."

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish with vegetable shortening.
- Beat egg whites in a metal, glass, or ceramic bowl with an electric mixer until stiff peaks form. Lift your beater or whisk straight up: the egg whites should form a sharp peak that holds its shape. Set aside.
- Place the egg yolks, oil, and orange juice into a mixing bowl; beat with an electric mixer until creamy and thick, about 5 minutes. Stir in 1 cup of sugar, mixing well, then lightly stir in the matzo cake meal and salt. Use a rubber spatula or wire whisk to fold about 1/3 of the beaten egg whites into the matzo meal mixture. Gently run the spatula through the center of the mixture, then around the sides of the bowl, repeating until fully incorporated. Add the remaining egg whites, folding until just incorporated.
- Mix together 3/4 cup of sugar with cinnamon in a bowl. Spread half the batter into the prepared baking pan; distribute the apple quarters evenly over the batter. Sprinkle the apple pieces with about 1/2 cup of the sugar-cinnamon mixture, spread the remaining batter over the apples; sprinkle the remaining sugar-cinnamon mixture over the top of the cake.
- Bake in the preheated oven until the cake is golden brown, about 45 minutes. Cut into squares while still warm.

MOIST LOW-FAT APPLE SPICE CAKE
My boyfriend and I invented this recipe for his mom's birthday and it came out great! It is very moist, with a denser texture than most cakes. Due to the large amount of apples, you can use less fat, and eggs are not needed at all. For best results, use firm, tart apples such as McIntosh, Courtland or Fuji.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, beat together the brown sugar with the margarine until smooth. Beat in the buttermilk.
- In a smaller bowl, combine the flour, salt, baking soda and powder, and spices. Add the flour mixture and chopped apples/applesauce to the sugar-buttermilk mixture. Wisk vigorously or blend in an electric mixture for several minutes, or until well blended.
- Coat the inside of a bundt cake pan with butter or margarine, and then cover with a thin layer of flour to prevent sticking. To the bottom and sides of the pan, add the crushed pecans. If desired, additional pecans may be used on the sides of the pan or added to the cake batter.
- Pour the batter into the greased/floured pan, and bake at 350 degrees for 40-45 minutes or until a wooden toothpick comes out clean. Remove the pan and allow to cool on a wire rack. Once cool, invert onto a serving dish.
- To make the icing: Using a fork, combine the powdered sugar and salt in a small bowl with the vanilla. Gradually add the milk while stirring, until it reaches the desired consistency. Drizzle over the top and sides of the cake.

Steps:
- Beat the first six ingredients together in a large mixing bowl.
- Then add the next four ingredients to the mixture and mix well.
- Bake in a greased and floured pan at 325 degrees for one and a half hours. (a round pan with a middle is preferred, but I also divided the mixture into ramekin dishes as well and turned out just fine)
- Let the cake cool down. And remove it to a serving dish. (If using ramekins this step is not necessary).
- Once removed prick holes all around the cake making sure you don't mutilate it in the process!
- For the icing:.
- Mix all three ingredients in a saucepan and boil for one and a half minutes.
- Pour over cake while topping is warm.
- The holes pricked into the cake allow the topping to absorb into the cake - a definite tasty must!

BEST MOIST APPLE CAKE
Best apple cake we've ever eaten. I've taken three recipes and combined them to create what my family now requests for birthdays! We think the cake is better once it sits for awhile. Even refrigerated and then heated back up, the flavors seem to really stand out. You can substitute pecans for the walnuts.

MOIST APPLE CAKE
Steps:
- Heat the oven to 350°F. Butter the bottom and sides of a 9x13-inch baking pan. Line the bottom of the pan with parchment and butter the parchment. In a medium bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt to blend. Combine the butter and sugar in a large bowl. Beat with an electric mixer on medium speed until combined (but not fluffy), scraping the bowl as needed, about 30 seconds. Add the eggs, one at a time, beating until combined and scraping the bowl as needed. Add about one-third of the flour mixture, mixing on medium low until combined. Add the applesauce, mixing on medium low until incorporated and scraping the bowl as needed. Mix in another third of the flour mixture, then the sour cream, and then the remaining flour mixture, mixing after each addition until just incorporated. Don't overmix. Scrape the batter into the prepared pan and spread it evenly. Bake until the edges of the cake are slightly set and the rest is very jiggly, about 15 minutes. Scatter the walnut topping evenly over the cake and bake until the crumbs are golden brown, the center of the cake springs back when lightly touched, and a toothpick inserted in the center has a few moist crumbs sticking to it, 30 to 35 minutes; check the cake early and if the crumbs are golden but the cake isn't fully baked, cover loosely with foil. Let cool on a rack for at least 20 minutes. Tips for Making a Moist Apple Cake:
- Use fresh apples: Fresh apples provide the best flavor and texture for an apple cake. Look for firm, crisp apples that are free of blemishes.
- Peel and core the apples: Before adding the apples to the cake batter, be sure to peel and core them. This will remove the tough skin and the bitter seeds.
- Toss the apples with lemon juice: Tossing the apples with lemon juice before adding them to the batter will help to prevent them from browning.
- Use a combination of granulated sugar and brown sugar: Using a combination of granulated sugar and brown sugar will give the cake a more complex flavor.
- Don't overmix the batter: Overmixing the batter will result in a tough, dense cake. Mix the batter just until the ingredients are combined.
- Bake the cake in a preheated oven: Baking the cake in a preheated oven will help to ensure that it rises evenly.
- Let the cake cool completely before frosting: Allowing the cake to cool completely before frosting will help to prevent the frosting from melting.
Conclusion:
Moist apple cake is a classic dessert that is perfect for any occasion. By following the tips above, you can make a moist, flavorful apple cake that your family and friends will love. Serve it with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat.
