LIGHT & MOIST LOW-FAT CARROT CAKE
This is a moist and delicious carrot cake recipe from "Good Housekeeping". It produces a fluffy (rather than dense) cake and also makes great cupcakes (about 24). If you wanted frosted cupcakes, cut down the sugar in the cake recipe by 1/4 cup. For Cream Cheese Icing: In bowl, stir 2 oz. reduced-fat cream cheese and 1/4 c. sugar until smooth. Add 1/2 tsp milk, 1/4 tsp vanilla, and 1/2 c. more sugar; stir to a drizzling consistency.

SUPER-MOIST DIABETIC SPICED CARROT CAKE
Thanks to 1Steve for refering me to this as per my request for a diabetic-safe carrot cake to make my Baci (grandmother in Polish) for her birthday. She enjoyed it, but did note that she tasted allspice (she's not a fan). I didn't taste the cake, so I can't vouch for it. I did adapt this recipe to make it healthier and more diabetic friendly. Because of the lacking sugars, I suggest checking on the cake before 40 minutes are up. I frosted with my Mock cream Cheese Frosting. A DIFFERENT FLUFFY, LIGHT AND MOIST CARROT CAKE (VERY LOW FAT)
I tried this recipe from a site and changed only one thing (I added 2 teaspoons cinnamon instead of the recommended 1 teaspoon orange extract) and it turned out very fluffy and moist. It also doesn't use butter or oil so its light and delicious. The frosting also doesn't use any butter so its light and delicious.

Steps:
- 1. I prepped for this cake last night, grated the carrots, chopped nuts and soaked the raisins. It took a total of 5 minutes to put together. You don't have to soak the raisins, I just like how it plumps them and makes them a lot softer. Preheat oven to 350 degree F. Grease and flour 2 - 9 inch cake pans. Set aside.
- 2. In a large mixing bowl, whisk the cake mix, pudding and cinnamon together.
- 3. Whisk the eggs, orange juice and oil in a separate bowl. Now, pour this into the dry ingredients and mix well. It will be a thick batter.
- 4. Stir in raisins, walnuts and shredded carrots. Stir until well combined.
- 5. Pour evenly into the 2 cake pans. I plop them each once on the counter, to release any air bubbles. Bake for 25 - 30 minutes, or until pick comes out clean.
- 6. Remove from oven to a cooling rack. Cool for 10 minutes, then remove the cakes, and continue cooling on racks.
- 7. Frosting: In a large bowl, beat the cream cheese with the butter until fluffy.
- 8. Add sugar, orange extract if using and enough orange juice until frosting is smooth and spreadable. Note: If you don't want the orange flavor, just add vanilla and 3 - 4 tablespoons of cream or milk in the place of the orange juice.
- 9. Spread frosting on the bottom cake layer. Then spread on top and sides. I saved some frosting out, to color and decorate. Being it's a birthday cake, had to fancy it up...
- 10. Although I have never made this into a 9 x 13, I'm quite sure you could...adjust baking time accordingly. Enjoy!
MOIST CARROT CAKE

Steps:
- Mix the sugar and vegetable oil together. The sugar will start to dissolve and add the vanilla then add the eggs one at a time. This is much wetter than creamed butter and sugar together and helps make the carrot cake moist.
- Next add in the flour, salt, baking soda and powder and your spices. After those are combined mix in the nuts and grated carrots.
- You can grate the carrots by hand or with a food processor. Peel them and cut off the top and bottom before grating for the cake. I usually grate by hand because the food processor grates the carrots finer than I like.
- Bake at 350 Farheinet in a 9x13 pan about 40-50 minutes or until a toothpick comes out clean and the top of the cake is firm to the touch.
Tips:
- Use fresh ingredients: This will help ensure that your carrot cake is moist and flavorful. Fresh carrots, eggs, and butter will give you the best results.
- Don't overmix the batter: Overmixing can make the cake tough. Mix just until the ingredients are combined.
- Use a bundt pan: This will help the cake bake evenly and give it a beautiful shape.
- Bake the cake at the right temperature: The ideal temperature for baking carrot cake is 350°F (175°C). If the oven is too hot, the cake will brown too quickly and the inside will be undercooked.
- Let the cake cool completely before frosting it: This will help prevent the frosting from melting.
Conclusion:
Moist carrot cake is a delicious and classic dessert that is perfect for any occasion. With its sweet and spicy flavor, cream cheese frosting, and beautiful presentation, it is sure to be a hit with everyone. Follow these tips and you'll be able to make a moist carrot cake that is sure to impress.
