Steps:
- Heat oven to 325 degrees F.
- In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.

CLASSIC MEATLOAF
Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

Steps:
- Preheat the oven to 325 degrees F.
- Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
- Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
- Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
- Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
- Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
- Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

MOM'S FAVORITE: BETTY CROCKER'S CLASSIC FLUFFY MEATLOAF
My mom has been using this recipe since she was married in the 50's and it's as good now as then. Steps:
- Mix ingredients thoroughly.
- Pack into greased 9x5x3" loaf pan.
- Bake in 350 degree oven for 1 1/2 hours.
- Serve hot or let cool and chill and serve cold.
- Other suggestions: add 3 cloves minced garlic; spread bacon slices over the top before cooking and/or 3 Tbsp catsup or barbecue sauce; substitute 1 Tbsp horseradish and 1 Tbsp for the mustard and sage; substitute 1 cup sauerkraut for 1 cup breadcrumbs and add 1/2 tsp dill weed to taste; try it with other herbs/spices or combinations added such as curry powder, cayenne and cumin, or oregano and basil.
Tips:
- Use fresh, high-quality ingredients. This will make a big difference in the flavor of your meatloaf.
- Don't overmix the meatloaf mixture. Overmixing can make the meatloaf tough.
- Use a meatloaf pan that is the right size for your meatloaf mixture. A too-small pan will cause the meatloaf to overflow, while a too-large pan will make the meatloaf too thin.
- Cook the meatloaf at a low temperature for a long period of time. This will help to keep the meatloaf moist and juicy.
- Baste the meatloaf with ketchup or barbecue sauce during the last 30 minutes of cooking. This will help to keep the meatloaf moist and add flavor.
- Let the meatloaf rest for 10 minutes before slicing and serving. This will help to keep the meatloaf from falling apart.
Conclusion:
McCormick meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight dinner. By following these tips, you can make sure that your meatloaf turns out moist, juicy, and flavorful every time.
