1 pkg Jiffy cornbread mix
1 pkg Jimmy Dean sausage (I use sage flavor)
8 eggs
1 c milk
1 medium onion, diced
1 bell pepper, diced (I use red, yellow or orange)
8 oz sliced mushrooms
1 clove minced garlic
1/4 tsp ground black pepper
2 c shredded cheese (I use either finely shredded Italian blend or Colby Jack cheese)

Steps:

  • 1. Preheat oven to 350 F. In a large skillet, brown sausage, add onions, peppers, garlic, and mushrooms and finish cooking. Remove from heat and set aside to cool slightly.
  • 2. Prepare Jiffy cornbread directions. Pour into a lightly greased 13x9-inch baking dish; set aside.
  • 3. Beat eggs, milk, and pepper in large bowl with a wire whisk until well blended.
  • 4. Sprinkle sausage mixture over cornbread; pour egg mixture on top. Cover with cheese.

½ cup buttermilk
1 cup sliced bacon, diced
1 small onion, diced
3 large eggs eggs, beaten
½ cup Swiss cheese, shredded

1/2 lb breakfast sausage
1 c frozen hash browns
1/2 can(s) rotel tomatoes with green chiles
1 c milk
4 eggs, beaten
1 c biscuit mix
1/4 c diced onion
1 c cheddar cheese, shredded
paprika

Steps:

  • 1. Brown sausage in a skillet, crumbling as it cooks. Remove from heat.
  • 2. Microwave hash browns on high for 3 minutes. Add potatoes and tomatoes to the sausage. Set aside.
  • 3. In a bowl, combine eggs, milk and biscuit mix.
  • 4. In a 9 x 13 inch baking dish, spread sausage mixture on the bottom.
  • 5. Sprinkle the onion on top of sausage. Sprinkle half the cheese over that.
  • 6. Carefully pour the egg mixture over the sausage mixture. Sprinkle the remaining cheese over the egg mixture. Sprinkle lightly with paprika.
  • 7. Bake at 400 degees for 25 minutes or until done. OLet stand 5 minutes.
  • 8. Cut into squares and serve.

6 eggs
½ cup milk (I used 2%)
1 (4 oz) can chopped green chiles

1½ cups of Cheddar cheese, shredded

  • Preheat your oven to 350 degrees.
  • Spread your Crescent Roll dough across the bottom of a greased (I use Pam) 9×13 baking dish. Make sure to press down on the seems so that it's completely covering the dish. Set aside.
  • Brown up your sausage in a skillet over medium-high heat until it's browned and crumbly.
  • Meanwhile, whisk your eggs in a small bowl with milk, chopped green chiles and S&P. Once your sausage is browned, spread it out over your crescent roll layer in the pan. Pour your egg mixture on top of the sausage and sprinkle cheese on top of that.
  • At this point, you can cover and refrigerate until you're ready to bake it the next morning or you can go ahead and pop it in the oven for 25 to 30 minutes. The edges will be brown and the center not wobbly when it's done.
  • Remove it from oven and allow to cool about 5 minutes before slicing and serving.
