MOMMY'S BANANA BREAD

Mommy's Banana Bread image

Absolutely the best banana bread in the universe! The crust on most recipes is dry because the pan is buttered and floured... but the crust becomes the best part when the pan is buttered and cinnamon-sugared!

Time 1h50m

Yield 12

Number Of Ingredients 14

2 teaspoons butter
1 tablespoon white sugar
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup butter, softened
1 cup white sugar
2 eggs
1 cup mashed ripe bananas
¼ cup milk
1 teaspoon white sugar, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 9x5-inch loaf pan with 2 teaspoons butter. Mix 1 tablespoon of sugar with 1 teaspoon of cinnamon in a small bowl, and pour the mixture into the buttered pan. Swirl and tap the pan to distribute cinnamon-sugar all over the inside of the pan, up to the rim.
  • In a bowl, whisk together flour, baking powder, salt, 1 teaspoon of cinnamon, and the nutmeg. In a large mixing bowl, beat 1/2 cup of butter with 1 cup of sugar until creamy; beat in eggs, one at a time, until thoroughly incorporated. Stir in the mashed bananas and milk. Mix in the flour mixture just until thoroughly moistened (a few lumps are fine), and scrape the batter into the prepared loaf pan. Sprinkle the top of the batter with 1 more teaspoon of sugar.
  • Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Let cool in the pan for 10 minutes before removing to finish cooling on a wire rack.

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 1/4 cups mashed bananas (4 to 5 Medium bananas)
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/3 cup unsalted butter, at room temperature
2/3 cup sugar (or Splenda, whatever you like)
2 eggs, separated (Large or Medium)
1 1/2 ounces milk
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons flax seeds
1/4 cup chopped walnuts (optional) or 1/4 cup pecans (optional)

Steps:

  • Cream together butter, sugar, & egg yolks until creamy.
  • Sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). Alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. Beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is KEY), next - fold in the chopped nuts also stir in with the wooden spoon.
  • Bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
  • Cool on a wire rack and serve with cream cheese or your favorite margarine.
  • Note: I love to wait a day and then toast a piece in my toaster oven - it is SO good when it gets re-heated and toasty with butter on it and a cup of coffee - YUM!

Tips:

  • Choose the right bananas: Use ripe bananas with plenty of brown spots. These bananas are sweeter and will produce a more flavorful bread.
  • Mash the bananas thoroughly: Make sure to mash the bananas until they are completely smooth. This will help to ensure that the bread is evenly textured.
  • Use a good quality butter: Unsalted butter is the best choice for banana bread. It will give the bread a rich, buttery flavor.
  • Don't overmix the batter: Overmixing the batter will result in a tough, dense bread. Mix the batter just until the ingredients are combined.
  • Bake the bread at the right temperature: Banana bread should be baked at 350 degrees Fahrenheit. This will help to ensure that the bread bakes evenly and doesn't burn.
  • Let the bread cool completely before slicing: This will help to prevent the bread from crumbling.

Conclusion:

Taking all of these tips into consideration, you'll find that this banana bread recipe will be a hit with your family and friends. It's a great way to use up overripe bananas, and it's a delicious and satisfying snack or breakfast treat. So next time you have some ripe bananas on hand, be sure to give this recipe a try.
