Shipwreck Casserole image

Shipwreck Casserole is a vintage ground beef recipe that comes together easily with layers of hamburger, potato, kidney beans and tomato soup. Zesty taco seasoning, bacon, cheese, and a buttery Corn Flake topping finish off the flavorful dish!

Provided by Blair Lonergan

Categories     Dinner

Time 1h30m

Number Of Ingredients 14

1 ½ lbs. ground beef
1 onion, diced
2 cloves garlic, minced
1 teaspoon chili powder
¼ teaspoon kosher salt, plus more to taste
¼ teaspoon dried oregano
¼ teaspoon ground cumin
Pinch cayenne
1 ½ lbs. (about 3 medium) russet potatoes, peeled and thinly sliced (less than ¼-inch thick)
1 (16 oz) can kidney beans, drained and rinsed
4 slices bacon, cooked and crumbled
2 cans (10.75 oz each) condensed tomato soup, not diluted
1 cup grated cheddar cheese
1 cup crushed Corn Flakes cereal mixed with 1 tablespoon melted butter

Steps:

  • Preheat oven to 350° F. Grease a 9 x 13-inch baking dish; set aside.
  • In a large skillet over medium-high heat, cook the beef, onion and garlic until the beef is no longer pink; drain. Stir in the chili powder, salt, oregano, cumin and cayenne.
  • In the prepared baking dish, layer half of the potatoes to cover the bottom of the pan (overlapping some is fine). Season the potatoes with a little bit of salt and pepper. Top with half of the beef mixture, half of the beans and half of the bacon. Pour one can of soup over top. Repeat the layers once more, starting with potatoes (seasoned with salt and pepper), then beef, beans, bacon and soup.
  • Cover with foil and bake 1 hour. Remove foil, sprinkle the cheese and buttered Corn Flakes on top, and return to the oven (uncovered) for about 10-15 more minutes (or until the cheese is melted, the topping is golden brown, and the potatoes are tender). Garnish with fresh parsley just before serving.

SHIPWRECK DINNER

Shipwreck Dinner image

It's not pretty but, it's a tasty, busy-night, kid-friendly meal. It's not 'gourmet,' but it's hot filling and easy. The prep time is generally limited to how fast your can opener works and how hard it is to unwrap your meat. The big bonus is that it's a complete one-pot meal with no chopping, unless you want to.

GRANDMA FLO'S SHIPWRECK

Grandma Flo's Shipwreck image

You can't go wrong with meat and potatoes, and this recipe combines them in one dish. The recipe was given to my husband by a friend at work who brought it for lunch often. I usually double it for my family; my husband works in a giant tire factory, and has an appetite to match. The smell makes it hard to wait for it to finish baking.

Tips:

  • For the best flavor, use high-quality flank steak or skirt steak.
  • Use a sharp knife to thinly slice the steak against the grain. This will help it cook evenly and quickly.
  • If you don't have time to marinate the steak, you can simply season it with salt and pepper before cooking.
  • Cook the steak over high heat until it reaches your desired doneness. For medium-rare, cook for about 2-3 minutes per side. For medium, cook for about 3-4 minutes per side. For medium-well, cook for about 4-5 minutes per side.
  • Let the steak rest for a few minutes before slicing it. This will help the juices redistribute and make the steak more tender.
  • Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
  • For the garlic butter sauce, use real butter for the best flavor. You can also add a squeeze of lemon juice or a dash of Worcestershire sauce to taste.
  • For the horseradish sauce, use fresh horseradish for the best flavor. You can also add a dollop of sour cream or yogurt to taste.

Conclusion:

Mom's 2-Way Beef Shipwreck is a delicious and versatile dish that can be made with a variety of sides and sauces. Whether you like your steak rare or well-done, with garlic butter or horseradish sauce, this recipe is sure to please everyone at your table. So next time you're looking for a quick and easy weeknight meal, give Mom's 2-Way Beef Shipwreck a try. You won't be disappointed!
