1 broiler/fryer chicken (4 to 5 pounds)
2 teaspoons kosher salt
1 teaspoon coarsely ground pepper
2 teaspoons olive oil
Minced fresh thyme or rosemary, optional

Steps:

  • Rub outside of chicken with salt and pepper. Transfer chicken to a rack on a rimmed baking sheet. Refrigerate, uncovered, overnight., Preheat oven to 450°. Remove chicken from refrigerator while oven heats. Heat a 12-in. cast-iron or ovenproof skillet in the oven for 15 minutes., Place chicken on a work surface, neck side down. Cut through skin where legs connect to body. Press thighs down so joints pop and legs lie flat., Carefully place chicken, breast side up, into hot skillet; press legs down so they lie flat on bottom of pan. Brush with oil. Roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 35-40 minutes. Remove chicken from oven; let stand 10 minutes before carving. If desired, top with herbs before serving.

1 cup ketchup
1 cup water
1/2 teaspoon dry mustard
1/4 cup vinegar
1/4 cup brown sugar, packed
5 -6 drops Worcestershire sauce
1 large bay leaf
salt and pepper (to taste)
10 -12 chicken drummettes

Steps:

  • Preheat your oven to 350°F.

1/4 cup fresh lemon juice
1/4 cup extra-virgin olive oil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh rosemary
2 teaspoons chile flakes
1 teaspoon freshly grated nutmeg
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
12 cloves garlic, smashed
One 4- to 6-pound chicken, cut into 8 pieces

Steps:

  • In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
  • Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

1 cup lemon juice
¼ cup soy sauce
¼ cup olive oil
2 tablespoons crushed garlic
1 tablespoon seasoned salt
½ tablespoon paprika
½ tablespoon ground turmeric
3 pounds chicken wings
1 pinch garlic salt, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix lemon juice, soy sauce, olive oil, garlic, seasoned salt, paprika, and turmeric together in a bowl. Add chicken wings; thoroughly massage marinade into the chicken. 12 pieces chicken, skinless (mix of legs and bone-in thighs)
1 tablespoon butter
2/3 cup Bisquick
1 (2/3 ounce) package Good Seasons Italian dressing, and recipe mix (this is a 0.7 oz pkg)
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425 degrees.
  • Meanwhile, place aluminum foil on a cookie sheet; dice up the Tbsp of butter and sporadically place diced butter on foil.
  • Place sheet with butter in pre-heating oven to melt; pull out when melted (don't burn) and tilt pan to coat.
  • Stir and combine Bisquick, about 3/4 of the packet of Good Seasons (reserve 1/4), paprika, garlic powder and pepper.
  • Sprinkle chicken with 1/4 remaining Good Seasons.
  • Coat chicken with Bisquick mix; set on buttered foil.
  • Bake for 35 minutes; turn chicken and bake for another 15 minutes (or longer if you like it a bit more crispy).

For the chicken
1 whole chicken, cut into parts
milk
1 stick (1/4 pound) butter
1 cup flour
1 tablespoon seasoned salt
2 teaspoons paprika
3/4 teaspoon pepper
1/2 teaspoon salt
For the gravy
2 tablespoons chopped scallion
1/2 cup chopped fresh mushrooms
3 tablespoons butter and drippings from baking dish, combined with scraped up crispy bits from chicken
2 tablespoons of the leftover flour seasoned for chicken preparation
1 cup milk
1 chicken bouillon cube (optional)

Steps:

  • Make chicken:
  • Soak chicken in milk to cover for 20 to 30 minutes. Spray a baking dish (one that will accommodate all the chicken pieces comfortably in one layer) with nonstick vegetable-oil spray.
  • Preheat oven to 400°F. Put the butter in the baking dish and heat it in the oven until the butter melts. Mix flour and seasonings together in paper sack or plastic baggie (1-gallon size). Shake each piece of chicken in seasoned flour. Place chicken pieces, skin-side down, in baking dish. Bake for 20 minutes. Turn chicken over and bake an additional 20 minutes or until cooked through and crispy. Remove chicken and set aside in a warm place.
  • Make gravy:
  • Sauté the scallions and mushrooms in the drippings over medium high heat, until soft. Mix the seasoned flour with milk first until you see no lumps. Whisk milk mixture into the sautéing onions and mushrooms. Taste and add bouillon cube, if desired (You may want to use additional milk if you do). Boil until thickened to preferred consistency.
