Warning: Keep a close eye on this tangy pot of goodness. Because it's been fine-tuned to perfection, it tends to vanish at gatherings. -Aysha Schurman, Ammon, Idaho

BEEF BRISKET WITH CELERY AND ONION
This is my favorite brisket recipe. The addition of lots of celery and onions along with the juice makes wonderful sandwiches. Recipe is for a crockpot.

Steps:
- In a large skillet, brown the brisket on all sides in oil; transfer to a slow cooker.
- In the same skillet, saute celery and onion for 1 minute.
- Gradually add broth, tomato sauce and water; stir to loosen the browned bits from pan.
- Add sugar, soup mix and vinegar; bring to a boil.
- Pour over brisket.
- Cover and cook on low for 7-8 hours or until meat is tender.
- Let stand for 5 minutes before slicing.
- Skim fat from cooking juices.
- Serve meat in buns with cooking juices.
Tips:
- Choose the right cut of brisket. Brisket is a tough cut of meat, so it needs to be cooked slowly and at a low temperature in order to become tender. The best cuts of brisket for braising are the flat cut and the point cut. The flat cut is leaner, while the point cut is fattier. Both cuts have a lot of flavor, so you can't go wrong with either one.
- Use a flavorful braising liquid. The braising liquid is what gives the brisket its flavor, so it's important to use a flavorful liquid. A good braising liquid will contain a combination of water, broth, wine, beer, and spices. You can also add vegetables to the braising liquid for even more flavor.
- Cook the brisket low and slow. The key to tender brisket is to cook it low and slow. This will allow the collagen in the meat to break down and the brisket to become fall-apart tender. Cook the brisket for at least 8 hours, or until it reaches an internal temperature of 195 degrees Fahrenheit.
- Let the brisket rest before serving. Once the brisket is cooked, it's important to let it rest for at least 1 hour before serving. This will allow the juices to redistribute throughout the meat. When you slice the brisket, it will be more tender and flavorful.
Conclusion:
Celery seed brisket is a classic comfort food dish that is perfect for a special occasion or a weeknight meal. The brisket is braised in a flavorful liquid until it is fall-apart tender, and the celery seeds add a unique and delicious flavor. Serve the brisket with your favorite sides, such as mashed potatoes, green beans, or cornbread.
