Time 25m

Number Of Ingredients 11

1 c crisco shortening
1 c sugar
3/4 c molasses ( i used grandmas original )
2 large eggs
1 c cold water
4 c all purpose flour
2 tsp baking soda
1 tsp salt
1 tsp ginger
1 tsp cinnamon
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees. Cream crisco shortening and sugar. Add molasses and eggs. Mix well. Then add water and vanilla and mix.
  • 2. Add dry ingredients, flour, soda, salt, ginger, and cinnamon. Mix well until all is blended together. Drop by tablespoon full onto greased cookie sheet or line your pan with parchment paper for easy cleanup. (I used a small ice cream scoop to drop my mixture). Bake for 9 minutes. Do not overbake. Ovens vary and I have a new oven and it took 9 minutes. You may want to check at 7 minutes if you do smaller cookies. Let cool and frost.
  • 3. This is a creamy mixture and makes a lot of cookies. These cookies freeze very well.
  • 4. For frosting.....I just used 1 stick of butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract and 2 tablespoons of milk. Mix well and frost your cooled cookies.

APPLESAUCE GINGERSNAP DROPS

Applesauce Gingersnap Drops image

I love these gingersnaps. They don't include any egg, and a very small amount of margarine, so they are lower in fat and cholesterol than most other gingersnap recipes I've tried. I also like that they are drop cookies. Besides cutting the prep time by removing the necessity of chilling before baking, this also makes for a lot less mess on your hands. It also feels nice to sneak a bit more fruit into the family's diet. The end result is a big, light, crispy-outside, chewy-inside "snappy" snap that is great with coffee, cocoa, or milk, and travels well. They are also sturdy enough to sandwich together - you might try with a light cream cheese frosting, or even vanilla ice cream, between two cookies for a kid-pleasing treat.

GRANDMA'S ONE BOWL MOLASSES APPLESAUCE CAKE

Grandma's One Bowl Molasses Applesauce Cake image

My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

Tips:

  • Use fresh, crisp apples for the applesauce. This will give your cookies the best flavor and texture.
  • Be sure to measure your ingredients accurately. This is especially important for the baking soda and salt, as too much or too little of either can affect the texture of your cookies.
  • Don't overmix the dough. Overmixing can make your cookies tough.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and spread less in the oven.
  • Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
  • Let the cookies cool completely before storing them. This will help them keep their shape and flavor.

Conclusion:

These molasses applesauce cookies are a delicious and easy-to-make treat that are perfect for any occasion. They are soft and chewy with a slightly spicy flavor from the molasses and a hint of sweetness from the applesauce. Whether you enjoy them fresh out of the oven or store them for later, these cookies are sure to be a hit with everyone who tries them.
