Time 4h25m

Number Of Ingredients 7

2 small packages of lime jello sugar-free
2 cups of boiling water
1/2 can crushed pineapple, undrained
1/2 cup chopped pecans or walnuts
1/2 cup cottage cheese
1 cup mayonnaise
6 oz canned milk

Steps:

  • Dissolve gelatin in boiling water*Let it cool a bit, and add the mayonnaise.*Let it cool more, but not set. --This allows the mayonnaise to blend in evenly.
  • When the gelatin is cool, add the remaining ingredients.*Partially freeze the pineapple and pecans before adding to the gelatin to help keep the ingredients in suspension. (If they are added while everything is warm, the pineapple and pecans settle a bit.)
  • Pour into a mold or into a pretty bowl, and chill until set.Unmold onto a serving plate just prior to serving.
  • Serve with extra pecan pieces, if desired.
  • ** For a more "festive look" if molding the salad, add a few maraschino cherries to the bottom of the mold and freeze: then add the thick salad contents and when you unmold, the cherries provide a nice color contrast.

  • Mix different types of fruit: This will give your salad a variety of flavors and textures. Some good combinations include berries, citrus fruits, melons, and tropical fruits.
  • Add some crunch: Nuts, seeds, and granola can add a nice crunch to your salad. They also provide some extra protein and fiber.
